Have you ever had a Financier? I actually had never heard of them despite my French heritage. I found recipes for them in a Cupcake and Muffin Cookbook that and I’ve been wanting to try them for quite some time now.
If you’ve never made them either all I can say is you’re in for a real treat. This recipe is absolutely delicious and sooo easy to make! All you’ll need is a cup of tea or coffee, maybe some French music in the background and you’ll feel like you’re in a Parisian Bakery!
What is a Financier?
A Financier is basically a little individual sized Almond Cake. There are endless flavor variations just like muffins. This Coconut Lime Financier Recipe adds a bit of a tropical flare.
Traditionally, the Financier is baked in a small rectangular shaped pan. Like a mini loaf pan. You will also see them baked in oval shapes as well. Today I used a standard muffin tin…because that’s what I had on hand.
It is thought that the original rectangular shape was supposed to represent a gold bar. According to another tradition it became popular in the financial district of Paris surrounding the Paris stock exchange. The cakes could easily be stored in the pocket for long periods of time without being damaged.
What are the main ingredients in a Financier Recipe?
The main ingredients in a Financier Recipe are
- Almond Meal or Almond Flour
- All purpose or Pastry Flour
- Powdered Sugar
- Melted Butter
- Egg Whites
The Coconut and Lime added to this recipe gives it a sweet and tart nutty flavor but you can add any of your favorite flavor combinations.

- 1 1/2 Cups Confectioner Sugar
- 1/2 Cup All purpose flour
- 1 Cup Almond meal or Almond Flour
- 1/4 Cup unsweetened, fine desiccated coconut
- 2 teaspoons Lime zest ,zest from about 1 lime
- 6 Large Egg Whites
- 1 1/2 Sticks Unsalted butter ,melted
- 3 Tablespoons Lime Juice ,freshly squeezed from about 1 lime
- Large Unsweetened coconut flakes for topping
Preheat oven to 375 Degrees F. Line with 12 paper liners or grease a standard cupcake tin. Set aside.
In a large mixing bowl, sift confectioner sugar and all purpose flour together.
Whisk almond meal, fine coconut and lime zest into your flour mixture.
In a separate bowl whisk egg whites until frothy. Whisk into your dry ingredients then add the butter and lime juice. Stir to combine.
Pour evenly into cupcake tin. Sprinkle tops with large pieces of coconut.
Place on the center rack of your pre heated oven and bake for 17-20 minutes or until a toothpick inserted comes out clean.
Cool in tin for about 5 minutes then remove cakes to a wire cooling rack and cool to room temperature.
*Tip for making your own desiccated coconut-
Place the large bits of unsweetened coconut pieces into the individual sized container of a blender and blend until fine.
*Cool your Financier completely then store for up to 3 days in an air tight container on your counter.
*Financiers are best NOT refrigerated.
*They can be stored in freezer for up to 3 months. Wrap well in plastic wrap then place in an air tight container.
