Ingredients
1 1/2Angel food prepared cakes from bakery
1pintHeavy whipping cream
28 ounce packagesCream cheesesoftened
3TablespoonsTequila
1CupSugar
Zest from 1 lime
Juice from 1 lime
Green and yellow food coloring
For the macerated strawberries:
1PoundStrawberriesstems remove and chopped
1/2CupSugar
For the tequila lime simple syrup:
1/2CupSugar
1/2CupWater
1/2CupTequila
1/2CupLime juice
Instructions
For the strawberries:
Mix cut up strawberries with sugar. Cover and put in refrigerator for 1/2 - 1 hour.
For the tequila lime simple syrup:
Combine sugar and water in a sauce pan and stir together. Heat on medium heat until it comes to a low boil and sugar is completely dissolved.
Remove from heat and cool to room temperature.
Add tequila and lime juice.
For the Lime cheese cake:
In a large mixing bowl beat cream cheese on medium speed with electric mixer for 3 minutes.
In a small bowl mix sugar tequila and lime juice together.
Pour sugar mixture into cream cheese and mix for 2 minutes to incorporate.
Mix a drop each of green and yellow food coloring in cream cheese mixture and mix well to incorporate if desired.
In a separate bowl whip cream until it forms soft peaks.
Fold whipped cream and zest into the cream cheese mixture.
Put trifle together:
Layer pieces of angel food cake on bottom of trifle bowl to cover.
Pour 1/4 C of tequila syrup over cake.
Spoon a layer of macerated strawberries over cake.
Spoon half of the cheesecake mixture over strawberries.
