Chunks of tender poached chicken breast tossed with pistachios, grapes and white wine give this Chicken Salad {Veronique} an extra special twist.

- 3 Cups Cubed poached chicken we poached in chicken broth for added flavor
- 1 Cup Seedless green grapes cut in half
- 1/2 Cup Roasted unsalted pistachios
- 1/2 Cup Finely chopped celery
- 1/2 Cup Finely chopped onion
- 1/2 Cup Mayonnaise
- 1/3 Cup Lemon yogurt
- 1 Tablespoon Dry white wine
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
In a large bowl mix the chicken, grapes, pistachios, celery and onion.
In a separate bowl mix the mayonnaise, yogurt, wine and mustard.
Fold the mayonnaise mixture into the chicken mixture.
Refrigerate. (Best made ahead so flavors meld together but you can also serve right away.)
We served it on a bed of boston lettuce with fruit as a garnish such as grapes, strawberries or cantaloupe.
