Mom’s {Stuffed Meatloaf}

This classic comfort food just turned into a gourmet meal with my Mom's {Stuffed Meatloaf}! This incredible recipe that my mom created was inspired by my grandmother and a Sicilian style meatloaf recipe.

Ingredients

For the meatloaf

  • 2 Pounds Ground beef
  • 1 Pound Ground pork
  • 3 Large eggs
  • 1 Medium onion ,chopped
  • 2 cloves Garlic ,minced
  • 2-3 Tablespoons Milk
  • 1 teaspoon Dried parsley
  • 1-2 Cup Seasoned bread crumbs (start with one cup and add more as needed to hold together.)
  • Salt and pepper to taste

For the filling:

  • 1-2 Carrots ,shredded
  • 1 ,6 ounce bag Baby spinach ,use just enough to line meatloaf
  • 5 Hard boiled eggs ,peeled
  • 8 ounces Grated cheese (Half mozzarella and half cheddar)
  • 5-6 Slices Thinly sliced deli ham or prosciutto
  • 1 ,16 ounce pacage Bacon (using enough to top meatloaf)

Instructions

  • Preheat oven to 350 degrees F.

For the meatloaf:

  • Mix all ingredients together in a large mixing bowl. (Make sure meat mixture holds together well to make it easier to roll.)
  • Place mixture onto a large piece of wax or parchment paper.
  • Flatten mixture out into a rectangle shape with hands. Approximately 12x18 to about a 1/2 inch thickness.

For the filling:

  • Sprinkle shredded carrot then the cheese over the rectangle mix. Then layer sliced ham and spinach. Place the hard boiled eggs in a row down the longest part of loaf at one edge. (This is where you will begin to roll the loaf.)
  • To roll your meatloaf, carefully lift the paper and begin to roll, tucking and sealing edges so the cheese won't melt and seep out.
  • When rolling is completed carefully transfer to a large baking sheet.
  • Smooth out any gaps with fingers and tuck edges smooth.
  • Layer bacon strips on top of loaf (she usually trims the fat off bacon) and place in oven for about one hour. Check for doneness. Remove from oven and let loaf sit for ten minutes before cutting.
