Crockpot Chicken Cacciatore {with Red Wine}

Ingredients

  • 8-10 Bone-in skinless chicken thighs
  • 2 Red peppers cut into strips
  • 2 teaspoons Dried basil or 2 Tablespoons, freshly chopped
  • 1/2 teaspoon Crushed red pepper optional
  • 2 Cloves Garlic ,Chopped
  • 1 1/2 Cups Red wine
  • 2 ,28 ounce cans Crushed tomatoes
  • 2 Tablespoons Olive oil
  • Salt and pepper to taste

Instructions

  • Heat oil in a large skillet on medium high heat. Season chicken with salt and pepper.
  • Brown chicken thighs on each side. Set aside.
  • Fill crockpot with all of the ingredients. Add chicken pieces, coat with sauce. Cover crockpot and turn on low for 8 hours or high for 4 hours.
  • Serve over pasta or rice.
