Juicy slices of Macintosh apples are wrapped with imported prosciutto for a delicious sweet and salty combination. A little crunch from some candied pecans, a sprinkle of Gorgonzola cheese and now all this Arugula Salad {with Prosciutto Wrapped Apples} needed was a killer dressing! A Raw Apple Cider Vinaigrette was the winner! Healthy, delicious and amazing!

Ingredients
For the Salad
1,11 ounce packageArugula
3mediumApples,sliced into 1 inch pieces and dipped lemon juice to prevent from browning
1/4poundImported prosciutto
Crumbled gorgonzola cheese,optional
1/4CupCandied pecans
For the Raw Apple Cider Vinaigrette
1CloveGarlic,minced
1TablespoonDijon mustard
1/4CupRaw apple cider vinegar
2TablespoonsFresh lemon juice
1-2TablespoonsRaw honey,as needed for sweetness
1/3CupExtra-virgin olive oil
Salt and pepper,to taste
Instructions
For the salad
Place arugula in a large salad bowl. Wrap apple slices with prosciutto and place on top of arugula. Sprinkle with gorgonzola and pecans.
For the Dressing
Combine all of the ingredients in glass mason jar, then seal the lid and shake until the honey dissolves and the ingredients are well combined. For best flavor, allow the dressing to marinate for at least 30 minutes.
