Preheat oven to 200 Degree F and line 2 large baking sheets with parchment paper. Set aside 2 muffin tin pans. Enough for 24 pineapple slices.
Slice top and bottom off of your pineapple and remove outer skin.
Slice your pineapple as thinly as possible. About 1/8 of an inch. The thinner you can slice it the quicker it will dry out. Some of mine were thicker than others so I had to keep checking them and some came out of the oven sooner than others.
Place your slices on your parchment lined baking sheets. The amount of slices you get will depend on the size of your pineapple. I got about 24.
Place in the oven. Cook time is going to vary greatly depending on how thin your slices are. Check them after about 30 minutes. I needed 1 hour for mine. When they have darkened in color and seem dry enough, flip them over and put back in the oven for another 30 minutes- 1 hour. They may not all be the same thickness and some may need to be removed sooner than others. Once they seem dry enough remove them and place them in a muffin tin to form them.
Let them sit overnight in the muffin tins to hold shape and continue to dry out. Place on cupcakes or a cake to decorate. You could also use them to dress up a salad, cheese platter or drink! Use your imagination!
