Apple Cider Caramel Apples

Nothing says Autumn more than Apple Cider and Caramel Apples.  Mix them together and you have one special treat to enjoy. Apple Cider Caramel Apples!

Ingredients

  • 2 Cups Sugar
  • 1/4 Cup Light corn syrup
  • 1/2 Cup Apple cider
  • 1/2 Cup Heavy cream
  • 2 Tablespoons Unsalted butter
  • 1 teaspoon Vanilla
  • Pinch of salt
  • toppings of your choice I used cinnamon chips, chopped pecans and melted white chocolate
  • 6 Macintosh Apples

Instructions

  • Line a cookie tray with parchment paper and lighly spray with cooking oil. Set aside.
  • In a medium saucepan combine sugar, corn syrup and apple cider. Whisk until just combined. Bring to a boil over medium high heat and cook without stirring for 8-10 minutes or until liquid turns a deep amber color and registers 320 Degrees F on a candy thermometer.
  • Remove from heat and slowly whisk in cream. ( A little at a time or it will boil over) Then add the butter, vanilla and a pinch of salt. Return to heat and stir until smooth. Remove from heat and let cool until it's thick enough to coat the surface of a spoon.
  • While you're waiting for caramel to cool wash about 8 apples and remove stems. Insert a popsicle stick or lollipop stick in the side where the stem was.
  • Dip apple into caramel and twirl to coat apple. Lift the apple out and let the excess caramel drip off. Then roll in topping.
  • Place on parchment lined cookie tray.
