Ingredients
3Ripe avocados
Juice from 1 lime
2TablespoonsFresh chopped cilantro
1Roma tomato,seeded and pulp removed, diced
1teaspoonCumin
1/2CupMinced red onion
1CloveGarlic,minced or put through a garlic press
1/2teaspoonSalt
1/2teaspoonPepper
Instructions
Slice avocados in half and remove pit. Scoop out inside of avocado with a spoon and place in a medium bowl. Mash with a fork until consistency is creamy with some small chunks . Place remaining ingredients in the bowl with the avocado and mix well.
Serve with corn chips and veggies as a dip or as a side with your favorite Mexican dishes.
** You will want to make the same day it will be served as it may begin to turn brown by the next day. Store covered in the fridge until ready to serve.
