Coconut Lime Financier Recipe {French Almond Cake}

  • 1 1/2 Cups Confectioner Sugar
  • 1/2 Cup All purpose flour
  • 1 Cup Almond meal or Almond Flour
  • 1/4 Cup unsweetened, fine desiccated coconut
  • 2 teaspoons Lime zest ,zest from about 1 lime
  • 6 Large Egg Whites
  • 1 1/2 Sticks Unsalted butter ,melted
  • 3 Tablespoons Lime Juice ,freshly squeezed from about 1 lime
  • Large Unsweetened coconut flakes for topping


  • Preheat oven to 375 Degrees F. Line with 12 paper liners or grease a standard cupcake tin. Set aside.
  • In a large mixing bowl, sift confectioner sugar and all purpose flour together. 
  • Whisk almond meal, fine coconut and lime zest into your flour mixture. 
  • In a separate bowl whisk egg whites until frothy. Whisk into your dry ingredients then add the butter and lime juice. Stir to combine. 
  • Pour evenly into cupcake tin. Sprinkle tops with large pieces of coconut. 
  • Place on the center rack of your pre heated oven and bake for 17-20 minutes or until a toothpick inserted comes out clean. 
  • Cool in tin for about 5 minutes then remove cakes to a wire cooling rack and cool to room temperature. 


*Tip for making your own desiccated coconut- 
Place the large bits of unsweetened coconut pieces into the individual sized container of a blender and blend until fine. 
*Cool your Financier completely then store for up to 3 days in an air tight container on your counter. 
*Financiers are best NOT refrigerated.
*They can be stored in freezer for up to 3 months. Wrap well in plastic wrap then place in an air tight container.
