3TablespoonsLime Juice,freshly squeezed from about 1 lime
Large Unsweetened coconut flakes for topping
Instructions
Preheat oven to 375 Degrees F. Line with 12 paper liners or grease a standard cupcake tin. Set aside.
In a large mixing bowl, sift confectioner sugar and all purpose flour together.
Whisk almond meal, fine coconut and lime zest into your flour mixture.
In a separate bowl whisk egg whites until frothy. Whisk into your dry ingredients then add the butter and lime juice. Stir to combine.
Pour evenly into cupcake tin. Sprinkle tops with large pieces of coconut.
Place on the center rack of your pre heated oven and bake for 17-20 minutes or until a toothpick inserted comes out clean.
Cool in tin for about 5 minutes then remove cakes to a wire cooling rack and cool to room temperature.
Notes
*Tip for making your own desiccated coconut- Place the large bits of unsweetened coconut pieces into the individual sized container of a blender and blend until fine. *Cool your Financier completely then store for up to 3 days in an air tight container on your counter. *Financiers are best NOT refrigerated.*They can be stored in freezer for up to 3 months. Wrap well in plastic wrap then place in an air tight container.
