Grilled Shrimp {Scampi}

This Grilled Shrimp {Scampi} adds a bit of a twist on the traditional recipe. The addition of ginger and lime juice creates a fresh bright flavor that's perfect for summer time grilling.

Ingredients

  • 1/4 Cup Soy sauce
  • 1/4 Cup Sesame oil
  • 2 Limes juiced
  • 2 teaspoons Honey
  • 1 2 inch piece fresh ginger finely grated,
  • 4 Cloves Garlic chopped
  • 1/2 Cup Canola oil
  • 1 Stick Unsalted butter softened
  • 24 Extra colossal or jumbo shrimp

Instructions

Make the basting marinade:

  • Whisk all of the ingredients except for the butter and shrimp in a medium bowl.
  • Pour into a blender or food processor and blend for one minute.
  • Add butter and pulse until thoroughly combined.
  • You can store in refrigerator or freezer in a covered container or ziplock bag or use right away.

Cooking instructions:

  • Season shrimp with salt and pepper and brush with mixture.
  • Place on pre-heated grill and cook for 2-3 minutes per side or until just cooked through.
  • (Cook time varies depending on size of shrimp used.)
  • To add more flavor, baste with mixture while grilling.
  • (Keep basting mixture separate from the left over mixture that you store so as not to contaminate.)
