These Chicken Salad Cucumber Bites are the perfect appetizer for those that are gluten intolerant.

  • 2 Cup Shredded chicken we poached ours but you can use leftover or rotisserie if you like
  • 1/2 Medium carrot grated
  • 1/4 Cup Red onion finely grated
  • 1/4 Cup Celery finely chopped
  • 1 Tablespoon Fresh flat leaf parsley Chopped
  • 1/4 Cup + 1 Tablespoon Mayonnaise
  • Salt and Pepper to taste
  • 2 English cucumbers peeled and sliced

Garnish option ingredients:

  • Violas small pansies work as well
  • Black olives sliced
  • Carrots julienned
  • Chives cut into 1-2 inch length
  • Paprika
  • Yellow cherry tomatoes
  • Pea shoots


For the chicken salad:

  • In a medium bowl mix all of the ingredients except for cucumbers.

Prepare the cucumbers:

  • Using a potato peeler shave off strips of the cucumber skin or run a fork down sides of cucumber to create streaks on the skin.
  • Slice cucumber into 1/4 inch thick slices.
  • Top with 1-2 Tablespoons of chicken salad.
  • Use your imagination for the garnish.
