- 2 Cup Shredded chicken we poached ours but you can use leftover or rotisserie if you like
- 1/2 Medium carrot grated
- 1/4 Cup Red onion finely grated
- 1/4 Cup Celery finely chopped
- 1 Tablespoon Fresh flat leaf parsley Chopped
- 1/4 Cup + 1 Tablespoon Mayonnaise
- Salt and Pepper to taste
- 2 English cucumbers peeled and sliced
Garnish option ingredients:
- Violas small pansies work as well
- Black olives sliced
- Carrots julienned
- Chives cut into 1-2 inch length
- Paprika
- Yellow cherry tomatoes
- Pea shoots
Prepare the cucumbers:
Using a potato peeler shave off strips of the cucumber skin or run a fork down sides of cucumber to create streaks on the skin.
Slice cucumber into 1/4 inch thick slices.
Top with 1-2 Tablespoons of chicken salad.
Use your imagination for the garnish.
