Ingredients
For the bread:
4CupsAll-purpose flour
3CupsSugar
2teaspoonsBaking soda
1 1/2teaspoonSalt
1teaspoonBaking powder
1teaspoonCinnamon
1 1/2teaspoonsGround cloves
1teaspoonNutmeg
1teaspoonAllspice
1CupCanola oil
2CupsCanned pumpkin
2/3CupCold water
4Large eggs
1CupRaisins (I never add),optional
2CupsDiced apples,I usually use macintosh but this time I used fuji and it was just as yummy
For the Cinnamon Apple Whipped Cream:
1CupHeavy cream
2TablespoonSugar
1/8teaspoonCinnamon
1/2CupApplesauce
Instructions
Preheat oven to 350 Degrees F. Grease two large loaf pans and set aside.
For the Bread:
In a large bowl mix together with a whisk all of the dry ingredients.
Add oil, pumpkin, water and eggs and mix well. (I stir by hand but you can use an electric mixer as well.) Fold in apples and raisins and pour into prepared pans. Bake on middle rack for 1 hour and 15 minutes or until a toothpick inserted comes out clean.Cool for 15 minutes and then remove loaves from pans and cool completely.
For the Cinnamon Apple Whipped Cream:
In a small bowl combine cream, sugar and cinnamon and whip until cream mounds. Fold in applesauce. Serve with a slice of apple pumpkin spice bread.
