For the Cake
3Large eggs
1 1/2CupsCanola or Vegetable oil
2CupSugar
3CupsAll purpose flour
1teaspoonSalt
1teaspoonBaking soda
2teaspoonVanilla
3CupsApples,peeled,cored and chopped
1 1/2CupWalnuts,chopped (optional)
For the Apple Cider Caramel
1CupApple Cider
1CupPacked brown sugar
1/4CupHeavy cream
1/2CupUnsalted butter
Instructions
For the Cake
Preheat oven to 350 Degrees F. Grease and flour a bundt pan.
In a large bowl beat eggs, oil and sugar until well combined. Add flour, salt and baking soda and mix well. Mix in vanilla. Fold in apples and nuts. Spread evenly in you bunt pan and bake for 1 hour or until a toothpick comes out clean. Let cool and then carefully remove from pan to a serving plate.
For the Apple Cider Caramel
In a medium saucepan over medium high heat bring cider to a boil. Reduce to medium and simmer for about 10 minutes or until cider is reduced to a 1/4 cup.Stir in brown sugar, cream and butter. Once it begins to bubble again, cook for 2 minutes then remove from heat. Cool to room temperature. Drizzle over Apple Cake.
