Ingredients

For the Cake

  • 3 Large eggs
  • 1 1/2 Cups Canola or Vegetable oil
  • 2 Cup Sugar
  • 3 Cups All purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking soda
  • 2 teaspoon Vanilla
  • 3 Cups Apples ,peeled,cored and chopped
  • 1 1/2 Cup Walnuts ,chopped (optional)

For the Apple Cider Caramel

  • 1 Cup Apple Cider
  • 1 Cup Packed brown sugar
  • 1/4 Cup Heavy cream
  • 1/2 Cup Unsalted butter

Instructions

For the Cake

  • Preheat oven to 350 Degrees F. Grease and flour a bundt pan.
  • In a large bowl beat eggs, oil and sugar until well combined. Add flour, salt and baking soda and mix well. Mix in vanilla. Fold in apples and nuts. Spread evenly in you bunt pan and bake for 1 hour or until a toothpick comes out clean. Let cool and then carefully remove from pan to a serving plate.

For the Apple Cider Caramel

  • In a medium saucepan over medium high heat bring cider to a boil. Reduce to medium and simmer for about 10 minutes or until cider is reduced to a 1/4 cup.Stir in brown sugar, cream and butter. Once it begins to bubble again, cook for 2 minutes then remove from heat. Cool to room temperature. Drizzle over Apple Cake.
