Ingredients
For the Sweet Potato Fritters
4CupsSweet Potato,Grated (about 2 medium sweet potatoes)
2LargeEggs,scrambled
1 1/2teaspoonshoney
2TablespoonsAll-purpose flour,or gluten free substitute to make gluten free
1/4teaspoonCayenne pepper,optional
1/2teaspoonSalt
1/2teaspoonpepper
1-2TablespoonsCoconut oil or olive oil for cooking
For the Honey Lime Sour Cream
1CupSour cream
Juice and zest from half of a lime
1-2TablespoonsHoney,depending on how sweet you like it
Instructions
For the Sweet Potato Fritters
In a large bowl,mix grated sweet potatoes with eggs, honey, flour, salt, pepper, and cayenne pepper.
Heat oil over medium low heat in a large skillet.
Drop spoonfuls of sweet potato mixture into heated skillet about an inch apart. Brown for 2-3 minutes and turn over. Brown other side for 2-3 minutes and remove to plate.
Watch carefully and adjust temperature as needed. (I browned my first batch a little too much. I started on medium heat but needed to reduce to medium low)
You can keep these in a warm oven while you cook each batch until you're ready to serve.
