Ingredients

  • 2 1/4 Cups All purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 Cup Light brown sugar ,packed
  • 1/2 Cup Granulated sugar
  • 1 Cup Coconut oil
  • 2 teaspoon Vanilla
  • 2 Large Eggs
  • 1 1/2 Cups Mini chocolate chips ,I use an allergy friendly brand that didn't contain any dairy

Instructions

  • Preheat oven to 350 Degrees F
  • In a medium bowl combine flour,baking soda and salt. Set aside.
  • In a large bowl cream together both sugars and the coconut oil. Mix in eggs one at a time beating well between each addition. Mix in the vanilla.
  • Gradually add the dry ingredients to the wet and mix until it forms a dough. Mix in the chocolate chips.
  • Drop by heaping teaspoonfuls onto an ungreased cookie sheet about an inch apart. Bake for 12-15 minutes.
  • *I baked mine on stoneware. It took about 13 minutes but it will depend on the size of your cookies.
  • Check them after about 12 minutes and adjust time accordingly.
  • Let cool for 2 minutes then remove cookies to a cooling rack using a spatula.
  • Once cooled transfer cookies to serving platter.
