Ingredients
1DozenEggs,hard boiled
6TablespoonsMayonnaise
4teaspoonsDijon mustard
4teaspoonsSriracha sauce
2teaspoonsLime juice
salt and pepper to taste
chopped cilantro for garnish
Instructions
Slice hard boiled eggs in half and remove yolks to a medium mixing bowl. Smash yolks with a fork until no more large pieces are left. Place whites on a serving dish and set aside.
Place mayonnaise, dijon mustard, sriracha and lime juice in the bowl with the yolks. Mix well. Add salt and pepper to taste and mix. I like to use my hand mixer at this point to make them smooth and creamy. Mix on high for 1-2 minutes for a creamy consistency.
Fill a piping bag fitted with piping tip and fill each egg white cavity evenly with mixture.
Top with a sprinkle of chopped cilantro to garnish.
** For extra spiciness add a squirt of sriracha to the top of each filled egg or sprinkle with a pinch of cayenne pepper.
