Spinach & Arugula Salad {with Orange Balsamic Vinaigarette}

This Spinach & Arugula Salad {with Orange Balsamic Vinaigarette} is a great combination of sweet and tart flavors for  a perfect Summer evening dinner!  Topped with mandarin oranges, craisins, sliced almonds and goat cheese.  It's a party in your mouth!

Ingredients

For the salad

  • 3 Cups Baby spinach
  • 3 Cups Baby arugula
  • 4 Ounces Mandarin oranges ,juice drained
  • 1/2 Cup Craisins
  • 1/2 Cup Sliced almonds
  • 1/2 Cup Pumpkin seeds
  • 1/2 Cup Crumbled goat cheese

For the Orange Balsamic Vinaigarette

  • 1/2 Cup Freshly squeezed orange juice
  • 4 Tablespoons Balsamic vinegar
  • 2 Tablespoons Dijon mustard
  • 4 teaspoons Honey
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Pepper
  • 1 Clove Garlic ,minced
  • 1/4 Cup Olive oil

Instructions

For the salad

  • In a large salad bowl, toss together spinach and arugula.
  • Top with remaining ingredients.

For the dressing

  • Place all ingredients in a dressing bottle. Shake to mix together.
