1CupRoasted unsalted almondsor raw almonds
Fine natural coconut,unsweetened (if you can't find the finely grated coconut just process your own by placing in food processor or blender)
Place almonds in the small serving attachment of your blender or a small food processor. Process until finely grated but before it turns to butter. Add the dates and water and process to mix. Remove to a mixing bowl and mix in the quinoa and apricots by hand. Form into 1 inch balls and roll in the coconut. Store in an airtight container in the fridge.
