Jicama Slaw Recipe

This Jicama Slaw Recipe is loaded with crunchy healthy veggies and topped with a tangy honey lime dressing. It's the perfect topping for Fish Tacos or as a tasty side in place of traditional Slaw!

Ingredients

  • 1 Large Carrot ,julienned
  • 1/2 Small Jicama ,peeled and julienned
  • 1/2 Large Red pepper ,seeds and stem removed and thinly sliced
  • 1 1/2 Cups Shredded Red Cabbage
  • 1/4 Large Red Onion ,peeled and thinly sliced

For the Honey Lime Dressing

  • 6 Tablespoons Olive Oil
  • 6 Tablespoons Unseasoned Rice Wine Vinegar
  • 3 Tablespoons Lime juice ,freshly squeezed
  • 1 Tablespoon Chopped Fresh Cilantro
  • 1/2 Tablespoon Honey
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Red pepper flakes
  • 1 teaspoon Salt
  • 1 teaspoon Ground pepper

Instructions

  • Place Chopped Vegetables in a large bowl

For the Honey Lime Dressing

  • In a medium bowl whisk all ingredients to blend well.
  • Pour over chopped vegetables and mix together. Cover and place in fridge or 30 minutes to overnight to let flavors meld together. 

Notes

Serve with Fish tacos or as a side dish in place of traditional slaw.
Amount that this recipe serves is assuming it's served with tacos. If served as a side dish it may serve more like 6 people.
