This Jicama Slaw Recipe is loaded with crunchy healthy veggies and topped with a tangy honey lime dressing. It's the perfect topping for Fish Tacos or as a tasty side in place of traditional Slaw!
1/2Large Red pepper,seeds and stem removed and thinly sliced
1 1/2CupsShredded Red Cabbage
1/4Large Red Onion,peeled and thinly sliced
For the Honey Lime Dressing
6TablespoonsOlive Oil
6TablespoonsUnseasoned Rice Wine Vinegar
3TablespoonsLime juice,freshly squeezed
1TablespoonChopped Fresh Cilantro
1/2TablespoonHoney
1/2teaspoonChili powder
1/2teaspoonRed pepper flakes
1 teaspoonSalt
1teaspoonGround pepper
Instructions
Place Chopped Vegetables in a large bowl
For the Honey Lime Dressing
In a medium bowl whisk all ingredients to blend well.
Pour over chopped vegetables and mix together. Cover and place in fridge or 30 minutes to overnight to let flavors meld together.
Notes
Serve with Fish tacos or as a side dish in place of traditional slaw.Amount that this recipe serves is assuming it's served with tacos. If served as a side dish it may serve more like 6 people.
