For the Cinnamon Swirl
2TablespoonsUnsalted Butter,melted
3TablespoonsGranulated Sugar
3TablespoonsBrown Sugar
2TablespoonsCinnamon
For the Banana Bread
2SticksUnsalted Butter,melted
3/4CupBrown Sugar,packed
1teaspoonVanilla Extract
2LargeEggs
2CupsAll-purpose Flour
1/2teaspoonSalt
1/4teaspoonBaking Soda
1 1/2teaspoonsBaking Powder
1CupMashed overripe bananas
1/2CupStrong brewed coffee
Instructions
For the Cinnamon Swirl
Mix all ingredients together in a small bowl and set aside.
For the Banana Bread
Preheat oven to 350 Degrees F. Grease 1 loaf pan and set aside.
In a medium bowl mash bananas. Stir in the strong brewed coffee and set aside to soak.
In another medium mixing bowl whisk together flour, salt, baking soda, and baking powder. Set aside.
In a large mixing bowl beat together melted butter and sugar until smooth.
Add eggs one at a time mixing well between each addition.
Mix in vanilla.
Add coffee soaked bananas and mix well.
Gradually add dry ingredients, mixing and scraping the sides of your bowl between each addition.
Pour 1/3 of your batter into your prepared loaf pan. Spread to cover the bottom of the pan. Sprinkle with 1/3 of your butter cinnamon sugar mixture and cut through with a butter knife to created a swirl.
Add another third of the batter into your pan and spread to cover first addition. Add another third of your butter cinnamon sugar and swirl with a butter knife.
Repeat with remaining batter and butter cinnamon sugar mixture.
Add a line of thinly sliced bananas to the top of your bread if desired.
Place on the center rack of your pre heated oven and bake for 50-65 minutes or until a toothpick inserted comes out clean.
Notes
*Cook time can vary depending on the type of loaf pan you use. Always start at the lower end of the suggested cook time and check periodically until done.
