One of my favorite family traditions that we have is our annual apple picking excursion. There’s no better way to ring in the Autumn season and create wonderful family memories. Plus, you come home with bushels of apples to whip up some wonderful concoctions with. Like these Apple Bars {with Coconut and Walnuts}.
A few weeks ago I shared my family’s favorite Apple Pumpkin Spice Bread recipe. I have been making that recipe for years now and it is a family favorite.
The recipe was taken from a small recipe book only containing about 20 recipes. The book was put out by the apple growers of New Hampshire. It has apple recipes shared by different New Hampshire orchards.
I’m so glad I finally decided to try another recipe from the book! These Apple Bars {with Coconut and Walnuts} were absolutely delicious!
Apple Bars {with Coconut and Walnuts}
Ingredients
For the Cookie Dough Base:
- 1 1/2 Cups Unsalted butter softened
- 1 3/4 Cups Sugar
- 4 Cups All-purpose flour
- 2 1/2 teaspoons Baking powder
- 1 teaspoon Salt
- 3 Large eggs
- 2 teaspoons Vanilla
For the topping:
- 4 Cups Brown sugar
- 4 Large eggs
- 2 Cups Chopped walnuts
- 3/4 Cup All-purpose flour
- 4 Cups Chopped apples
- 2 Cups Shredded sweetened coconut
Instructions
- Preheat oven to 375 Degrees F. Set aside two 9x11 cookie sheets.
For the Cookie Dough Base:
- In a large mixing bowl cream the butter and sugar together. Add the eggs one at a time mixing well between each addition. Mix in the vanilla. Add dry ingredients and mix for 2-3 minutes. Divide dough in half and spread to cover cookie sheets. (You may need to press down with your fingers to spread more easily). Bake for 8 -10 minutes on middle rack of oven. Prepare topping while base is baking.
For the topping:
- Mix sugar and eggs well. Add flour and mix to incorporate. Fold in apples, nuts and coconut.
- Remove base from oven and spread apple mixture over top. Return to oven and bake 10-15 minutes longer. Cool and cut into bars.
Nutrition
Top your Apple Bars {with Coconut and Walnuts} with a dollop of whipped cream or eat them as is.
