The perfect quick cake when you need a delicious dessert without the fuss. Chuck full of apples and walnuts, this Apple Cake {with Apple Cider Caramel} is super moist and delicious! Serve it on its own or make it even more amazing and drizzle it with Apple Cider Caramel!
Paul and I got a little carried away on our apple picking excursion a few weeks ago. I’m still working my way through the bushel of apples we picked! There have been some awesome treats that came out of that bag though. Like {Waters Farm} Apple Crisp and Caramel Apple Cheesecake {Cupcakes}. I have to say this apple cake came out absolutely amazing! The cake was delicious on its own but the apple cider caramel put it over the top! I heard a muffled “Wow!” come out of my son’s mouth after he took his first bite. Three bites later it was gone!
I had never made apple cider caramel before. I love the spicy tart flavor it adds to the caramel. It was the perfect topping to add to this cake and I’m looking forward to using the leftover caramel on some vanilla ice cream.
Apple Cake {with Apple Cider Caramel}
Ingredients
For the Cake
- 3 Large eggs
- 1 1/2 Cups Canola or Vegetable oil
- 2 Cup Sugar
- 3 Cups All purpose flour
- 1 teaspoon Salt
- 1 teaspoon Baking soda
- 2 teaspoon Vanilla
- 3 Cups Apples ,peeled,cored and chopped
- 1 1/2 Cup Walnuts ,chopped (optional)
For the Apple Cider Caramel
- 1 Cup Apple Cider
- 1 Cup Packed brown sugar
- 1/4 Cup Heavy cream
- 1/2 Cup Unsalted butter
Instructions
For the Cake
- Preheat oven to 350 Degrees F. Grease and flour a bundt pan.
- In a large bowl beat eggs, oil and sugar until well combined. Add flour, salt and baking soda and mix well. Mix in vanilla. Fold in apples and nuts. Spread evenly in you bunt pan and bake for 1 hour or until a toothpick comes out clean. Let cool and then carefully remove from pan to a serving plate.
For the Apple Cider Caramel
- In a medium saucepan over medium high heat bring cider to a boil. Reduce to medium and simmer for about 10 minutes or until cider is reduced to a 1/4 cup.Stir in brown sugar, cream and butter. Once it begins to bubble again, cook for 2 minutes then remove from heat. Cool to room temperature. Drizzle over Apple Cake.
