A sweet and delightful twist on your favorite breakfast treat! This Apple Fritter Cake combines an applesauce spice cake with an apple pie filling that’s baked right in the middle. To make this dessert even more irresistible, holes are poked into the top of the cake to soak up the vanilla icing drizzle!
I know….you can’t even control yourself right now can you??! Yes this cake was just as amazing as it sounds! I made it this past weekend for our Sunday Game Day party and scored big points with everyone.
My son decided to have a little Game Day party and once Mom and Dad heard, the little party turned into a house full! It was a good thing too because we needed a lot of football fans to eat all the food my son turned out!
When it comes to food my family has a “go big or go home” kind of mentality. Something past down through the generations. Whenever Grammy cooked Sunday dinner she would have 1 or 2 types of meat and about 20 different sides. My son learned from the best and he didn’t disappoint.
He decided to fire up the smoker and made his amazing Barbecue Pulled Pork with two different sauces to add to it. A football party would not be complete without something “Buffalo” so he made Buffalo Chicken Wings and Buffalo Chicken Dip . He wasn’t satisfied with just one type of wing so some terriaki wings were added to the menu too.
Mom joined in the cooking frenzy and whipped up one amazing Baked Macarroni and Cheese, some Sour Kraut with Kielbasa, Cole Slaw and a giant bowl of salad.
My son’s friends brought a delicious Homemade Apple Pie that was to die for and an Oreo stuffed half brownie half cookie bar combo (I think my nephew devoured half of the plate of these :0).
I made Heath Bar Dip and this yummy Apple Fritter Cake. What a smorgasbord! Yes….there was left overs and we are still eating them. 🙂
Apple Fritter Cake
Ingredients
Filling
- 2 Cups Chopped apples ,about 2 medium
- 1/3 Cup Granulated sugar
- 1/2 teaspoon Cinnamon
- 2 Tablespoons Cornstarch
- 4 Tablespoons Apple cider or water
Sugar topping
- ½ Cup Dark brown sugar
- ½ teaspoon Cinnamon
Cake
- ⅓ Cup Butter ,room temperature
- ¾ Cup Sugar
- ½ Cup Applesauce
- 1 teaspoon Vanilla
- 2 Large Eggs
- 2¼ Cups Flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 1 teaspoon Cinnamon
- 1 Cup Greek yogurt or sour cream
Glaze
- 2 Cups Confectioner sugar
- ⅓ Cup Milk
- 1 teaspoon Vanilla
Instructions
Make Filling
- In a medium saucepan combine apples, granulated sugar, cinnamon, cornstarch and cider. Heat over medium heat for5-6 minutes until apples soften and a liquid thickens. Set aside to cool.
Prepare the sugar topping
- Mix dark brown sugar and cinnamon in a small bowl and set aside.
Make the Cake
- Preheat oven to 350° Degrees F. Grease a 9x13 baking pan and set aside.
- In the mixing bowl of a stand mixer fitted with the paddle attachment beat butter and sugar, about 3 minutes until fluffy. Add applesauce, vanilla and eggs and mix on medium until combined.
- In a separate bowl whisk together flour, baking powder, baking soda, salt and cinnamon.
- Add the dry mixture and the sour cream in alternating parts, starting and ending with the dry.
- Mix until just combined.
- Spread ½ the cake batter in the bottom of the prepared pan. Top with the apple mixture, spreading carefully to cover the batter. (I placed dollops of the apple mixture in rows and then spread them out) Then top with 1/2 of the brown sugar, sprinkling all over the apple mixture.
- Cover with the remaining batter and sprinkle the remaining 1/2 of the brown sugar all over the top.
- Bake 35-40 minutes, or until the center of the cake is set.
Glaze
- While the cake is baking prepare the glaze by mixing the powdered sugar, milk and vanilla in a medium bowl.
- When cake is done, immediately poke holes in the cake using a knife or dowel, about 30 pokes.
- Pour the glaze over the top of the cake spreading to cover it completely.
- Let the glaze set up for about 20 minutes before serving.
