Juicy slices of Macintosh apples are wrapped with imported prosciutto for a delicious sweet and salty combination. A little crunch from some candied pecans, a sprinkle of Gorgonzola cheese and now all this Arugula Salad {with Prosciutto Wrapped Apples} needed was a killer dressing! A Raw Apple Cider Vinaigrette was the winner! Healthy, delicious and amazing!
This salad is one of my son’s creations. I hope to have more of his creations to share with you because he is an amazing cook! When he was a baby my grandmother used to babysit for him while I was at work. Instead of watching Sesame Street and Barney he would watch Emeril and Rachael Ray with her. His first culinary creation that I can remember was when he was about 2 1/2 years old. I told him that I was going to make him lunch after I took a shower. Apparently, he couldn’t wait. When I entered the kitchen I could see a counter stool in front of the fridge. My 3 foot son, at the time, was sitting at the counter with frozen raisin bread and a jar of open peanut butter. He knew he wasn’t allowed to use a knife so he decided that spreading the peanut butter with his hand would work just as well. Naturally the bread wasn’t the only thing covered with peanut butter.
Since then he has gone on to make some amazing dishes. Like Lobster Thermidor and Osso Buco. He has even made some awesome sculpted birthday cakes for his girlfriend. Even now as I write this post he is brewing up a batch of my grandfather’s secret recipe for Krupnik (A Lithuanian liquor made with spices and honey). I’m so grateful for the time that he got to spend with his great-grandparents and I’m so happy that he is carrying on their great talent and love for cooking!
This salad would make a delicious side with any meal or could be served as a light lunch. I loved the combination of flavors he used. They all complimented each other so well. Even my daughter who can be a little on the picky side was going in for seconds. Enjoy!
Arugula Salad {with Prosciutto Wrapped Apples}
Ingredients
For the Salad
- 1 ,11 ounce package Arugula
- 3 medium Apples ,sliced into 1 inch pieces and dipped lemon juice to prevent from browning
- 1/4 pound Imported prosciutto
- Crumbled gorgonzola cheese ,optional
- 1/4 Cup Candied pecans
For the Raw Apple Cider Vinaigrette
- 1 Clove Garlic ,minced
- 1 Tablespoon Dijon mustard
- 1/4 Cup Raw apple cider vinegar
- 2 Tablespoons Fresh lemon juice
- 1-2 Tablespoons Raw honey ,as needed for sweetness
- 1/3 Cup Extra-virgin olive oil
- Salt and pepper ,to taste
Instructions
For the salad
- Place arugula in a large salad bowl. Wrap apple slices with prosciutto and place on top of arugula. Sprinkle with gorgonzola and pecans.
For the Dressing
- Combine all of the ingredients in glass mason jar, then seal the lid and shake until the honey dissolves and the ingredients are well combined. For best flavor, allow the dressing to marinate for at least 30 minutes.
