This Avocado Salad Dressing has it all! A little bit of creaminess, a little bit of sweetness and a little bit of heat. The perfect topping for your Salad, chicken and fish or use it as a veggie dip!
About a year ago I went to a Boston restaurant with Paul and fell in love with this dressing. They served it two ways. As a dip with the veggie platter that came out during the cocktail hour and then I was pleasantly surprised to see it on my salad with my dinner.
I love avocados so I knew I needed to try figure out what was in that delicious dressing so I could have it whenever I wanted! That’s the great thing about the internet…and blogs! I was able to search around until I found a few recipes that I thought might be close. I made some tweaks and now I have my favorite Avocado Salad Dressing any time I want!
I like adding yogurt instead of sour cream to give it a little bit lighter creamy texture. The avocado has enough healthy fat so it really doesn’t need any help with that. The jalapeno adds a little bit of heat but I even add a little more with a pinch of cayenne pepper. Remember….you can make it how ever you like it. If you don’t like spicy food feel free to hold back on the spice. If you like it super spicy add a bit more.
I’ve been trying to shed that Winter layer now that Summer is quickly approaching so I made this dressing to top a Mexican style dinner salad last week. I used some of my delicious DIY Taco Seasoning to season some chicken breast and grilled it. Then I topped my salad with some tomatoes, black beans cucumbers, a bit of shredded cheddar cheese, tortilla strips, and chicken. It was the perfect healthy dinner that was full of flavor!
Avocado Salad Dressing
Ingredients
- 1 Small avocado ,peeled and sliced
- 1 Small jalapeno ,seeded and roughly chopped (optional)
- 1 Garlic clove ,peeled
- 1/4 Cup Loosely packed cilantro
- 1/4 Cup Greek Yogurt ,I used fat free
- 1/4 Cup Smooth salsa ,medium or mild
- 1/2 Cup Milk
- 2 Tablespoons Olive oil
- 1 Tablespoon Honey
- Juice from 1 lime
- 1/4 teaspoon Salt
- 1/4 teaspoon Cumin
- 1/8 teaspoon Pepper
- 1/8 teaspoon Paprika
- Pinch of cayenne ,optional
Instructions
- Place all ingredients in blender and mix on high until everything is well blended.
- You can thin with a little more milk if needed.
- * If using as a dip you can keep it on the thicker side if using as a dressing you may want to thin so it's pourable.
