Not a fan of Green Smoothies? This Banana Avocado Smoothie may have you changing your mind! So delicious you’ll forget what color it is!
Green Smoothies are the latest craze but I have a hard time getting past the color. I see green and I think it’s going to taste like grass! This one won me over though. Just the right amount of creaminess and sweetness….and absolutely no grass flavor!
Usually when we think of college dining hall food we think of food with no flavor or unhealthy food sitting under heat lamps to stay warm.
The college my daughter attends however definitely got it right! She attends UMASS Amherst in Western Massachusetts. Their goal is to become a more sustainable campus and a model for other colleges to follow. You can read more about their program here.
Whenever I visit my daughter, instead of spending more money on food at a local restaurant we just eat at one of the dining halls for free!
Well…it’s built into her room and board so not exactly free but we’re already paying for it so it doesn’t make sense to spend more somewhere else.
Especially when it’s delicious! The other night I had Salmon, roasted sweet potatoes, salad, and butternut squash spaghetti with spinach, pecans and craisins. Yum!
One of my favorite parts of eating at Hampshire Dining Hall is their delicious smoothie station where they crank out new smoothie concoctions every day.
At one of my last visits the smoothie of the day was this amazing Banana Avocado Smoothie. I enjoyed it so much I needed to make my own version at home to share with you!
Banana Avocado Smoothie
Ingredients
- 3 Ripe bananas
- 1/2 Ripe avocado
- Handful of baby spinach
- 12-14 Ice cubes
- 2 Cups Unsweetened coconut milk
- 2 Tablespoons Honey
- 1/2 teaspoon Vanilla
Instructions
- Place all ingredients in a blender and blend on high speed until smooth.
- Makes about 4 (8 ounce) servings.
