A crisp coconut oil sugar cookie topped with a fluffy cream cheese topping and sweet summer berries. This Berrylicious {Fruit Pizza} is the perfect summer sweet treat!
This Berrylicious {Fruit Pizza} is a true family favorite. I brought it to our annual Summer Family Reunion last weekend and it was devoured in record time!
The recipe I use for the sugar cookie is crisp on the outside and soft on the inside so you can either pick it up with your hands and eat it like a true slice of pizza or dig into it with a fork and not have to worry about ending up with a crumbly cookie mess. The combination of the fluffy cream cheese topping and sweet summer berries is absolutely heavenly creating one Berrylicious treat!
Berrylicious {Fruit Pizza}
Ingredients
For the cookie
- 1/2 Cup Confectioner sugar
- 1/2 Cup Sugar
- 1/2 Cup Coconut oil ,melted
- 1/2 Cup Unsalted butter ,softened
- 1 Large Egg
- 1 teaspoon Vanilla extract
- 2 1/2 Cup All purpose flour
- 1/2 teaspoon Cream of tartar
- 1/2 teaspoon Salt
- 1/2 teaspoon baking soda
For the cream cheese topping
- 1 Stick Unsalted butter ,softened
- 1 ,8 ounce package Cream cheese ,softened
- 2 1/2 Cups Confectioner sugar
- 2 Tablespoons Milk
- 1 teaspoon Vanilla extract
Fruit topping
- 1 ,1 pound package Strawberries , sliced (I use and egg slicer to make it quick and easy)
- 1 ,6 ounce package Raspberries
- 1 ,6 ounce package Blackberries
- 1 ,6 ounce package Blueberries
Instructions
- Preheat oven to 375 Degrees F. Lightly spray Large round pizza stone or pan with oil. Set aside.
- In a large mixing bowl cream together both sugars, coconut oil, butter, egg, and vanilla. In a separate bowl mix together flour, cream of tartar, salt, and baking soda. Add dry ingredients to wet ingredients; mix well.
- Place the dough in the center of your pizza stone and press down with your hands to evenly spread dough on to the pan. **Make sure you leave about 1/4 to 1/2 inch of space from the edge of the pan to allow for expansion as your cookie bakes.
- Sprinkle the top of cookie with about 1-2 Tablespoons of granulated sugar and place in oven. Bake for 15-18 minutes on center rack. Bake until cookie becomes slightly golden.
- Remove and cool.
- Once cooled carefully loosen from pan with a spatula and slide onto your serving dish.
- **You want to make sure not to under bake or it will be difficult to move your cookie to a serving dish and it will be difficult to eat with your hands.
For the cream cheese topping
- In a large mixing bowl cream together butter and cream cheese for 3 minutes until light and fluffy.
- Gradually add sugar and mix on low to incorporate. Add milk and vanilla and cream for 3- 5 minutes until light and fluffy.
Put your pizza together
- Spread cream cheese topping evenly to edge of cooled cookie.
- Top with fruit in design of your choice.
- Use your imagination!
- Store in fridge until ready to serve.

Here’s the fruit pizza I made this year when the New England Patriots won the Super Bowl!! I like to think my little Patriot logo made out of fruit helped bring them some luck!
