This Black Bean Corn Avocado Salad is packed with vegetable goodness! I never knew how delicious veggies could be! Totally addicting!
Serve this dish as a tasty side or a delicious dip.
I know that I called this recipe a salad but it could just as easily be served as salsa or a dip. We usually eat it both ways. First we have it as a side with our meal and then we eat all the left overs on corn chips because we just can’t get enough!
Paul and I had some friends over a couple weekends ago to celebrate Spring’s arrival, warmer temperatures and the last of the snow finally melting away!
He and the guys kicked off the golfing season with their very first round of golf in the afternoon. When they finished up we all met at Paul’s house for a smorgasbord of food.
He fired up the grill and made some juicy sirloin steak and venison. We steamed some corn on the cob… which was surprisingly delicious considering it’s not in season. I made some of my chocolate cupcakes for dessert and this delicious Black Bean Corn Avocado Salad as a side to go with the steak.
All of our guests brought something to share as well. We had a healthy veggie platter with dip for an appetizer, pasta salad and baked beans, gingerbread cookies and finally…. a bag of Cheetos! No party is complete without a bag of Cheetos! 🙂
Everything was amazing and I had many requests for this yummy salad. I have a feeling I’ll be making this one a lot this summer. Enjoy!
Black Bean Corn Avocado Salad
Ingredients
- 1 ,15 ounce can Black beans, drained and rinsed
- 1 Medium Red onion ,chopped
- 2 Scallions ,chopped
- 1 Red pepper ,chopped
- 1 Jalapeno pepper ,diced
- 2 Avocados ,diced
- 3 Ears Corn on the cob ,steamed, cooled and corn cut off of the cob, (or 1 bag of frozen corn steamed and cooled)
- 20-30 Cherry tomatoes ,cut in quarters
- 1/4 Cup ,chopped cilantro
- 2 teaspoons Cumin
- Juice from 2 limes
- 3 Tablespoons Olive oil
- Salt and pepper to taste
Instructions
- Place all ingredients in a large bowl and toss together well.
- Refrigerate for 2 hours to chill and so flavors can meld together.
- Serve as side or as a salsa with chips.
- This served 10 people as a side dish with a small amount left over.
