Buttermilk {Gluten Free} Waffles

These Buttermilk {Gluten Free} Waffles use a combination of tapioca and rice flour in place of all purpose flour.  Then whipped egg whites are folded into the batter to give them a light and fluffy texture. They’re so  delicious you may just prefer these over regular waffles even if you don’t have a gluten intolerance!

Buttermilk {Gluten Free} Waffles

My mom has had a gluten intolerance for a few years now.  There are so many foods that she loves, it’s difficult for her to keep on track with her gluten free diet.  She isn’t always good about not having gluten and always pays for it after.  When we find a recipe as delicious as this one it makes things a little bit easier.

She has been making this recipe for a few years now and it has become a family favorite.  Even though no one else has a gluten intolerance we always love it when she makes these Buttermilk {Gluten Free} Waffles.  In fact…my daughter prefers these over regular waffles.  The only problem is now my daughter has a lactose intolerance issue.  Next time I will try making them with almond or coconut milk and I bet they’ll still be just as delicious!

Buttermilk {Gluten Free} Waffles

My mom always doubles the recipe when she makes these.  She wraps up the left over waffles in packs of two and freezes them.  That way whenever she is looking for a gluten free treat in the morning she has a prepackaged serving ready to go!  She just pops them in the toaster and breakfast is ready in a couple minutes!

Buttermilk {Gluten Free} Waffles

These Buttermilk {Gluten Free} Waffles use a combination of tapioca and rice flour in place of all purpose flour.  Then whipped egg whites are folded into the batter to give them a light and fluffy texture.

Ingredients

  • 2 Large Eggs ,separated
  • 1 Cup Buttermilk
  • ¼ Cup Vegetable oil
  • 1 Cup Rice Flour
  • ½ Cup Tapioca Flour
  • 1 ½ teaspoons Baking soda
  • 1 teaspoon Baking powder

Instructions

  • In a medium bowl beat egg whites to form stiff peaks. Set aside.
  • In a large bowl mix egg yolks with buttermilk and oil.
  • In a separate bowl stir dry ingredients together.
  • Mix egg yolk mixture into dry ingredients.
  • “Fold” in egg whites.
  • Preheat waffle iron and oil to prevent sticking.
  • Pour batter onto iron, close top down and cook for 2-3 minutes or until waffles are cooked.

Having a gluten intolerance doesn’t mean you need to stop eating the foods you love.  These Buttermilk {Gluten Free} Waffles make it easy for my mom to still enjoy the foods she loves to eat and so can you!

    This is a wonderful recipe. I usually double the batch, (makes about 12) and make them on Saturdays. I wrap 2 in foil and put them in the freezer. Comes in handy for the grandkids who come looking for waffles or need something quick for breakfast during the week. Just pop in the micro or toaster.
