This sandwich might be one of the best things I have ever tasted!  From the saltiness of the prosciutto to the sweetness of the honey balsamic reduction to the creamy melted fresh mozzarella it was heaven in every bite!

I don’t know about you but I totally fall for the Grocery Store’s marketing strategy of their purposefully placed items.  Whenever I come to the display of ripe red tomatoes, fresh basil and fresh mozzarella I can just hear them calling, “Make us into Caprese.”

I may have gone in for just a few specific items but you know the tomatoes, basil and mozzarella were definitely not going to be left behind.

 

Caprese Grilled Cheese {with Prosciutto & Honey Balsamic Reduction}

If you’ve been following me for a while now you may have seen a few of my Caprese recipes: Caprese Tartlets, Chicken Caprese and Caprese Quinoa Salad to name a few.  I clearly have a thing for Caprese! So when I came up with the idea for this Caprese Grilled Cheese I knew it was going to be love at first sight!

Caprese Grilled Cheese {with Prosciutto & Honey Balsamic Reduction}

Ingredients

Recipe for 2 sandwiches

  • 4 Slices Whole grain bread from the bakery
  • 1 Large tomato ,sliced
  • 4 Slices Prosciutto
  • 5 Large leaves Fresh basil ,chiffonade
  • 4-6 Slices Fresh mozzarella ,sliced about 1/4 inch thick
  • Butter for spreading on bread for cooking

For the honey balsamic reduction

  • 1/2 Cup Balsamic vinegar
  • 1/8 Cup Honey

Instructions

For the Honey Balsamic reduction

  • In a small saucepan bring honey and balsamic to a boil. Reduce heat and simmer for about 10-15 minutes. Mix with a rubber spatula occasionally the first 5 minutes and then constantly the last 10. Set aside ( If the reduction begins to cool and thicken too much just heat a bit to loosen it.)

For Sandwich

  • Heat a large fry pan over medium low heat. Butter one side of one slice of bread. Flip over and layer 3 slices of cheese, 2 slices of tomatoes, half of the basil and 2 slices of prosciutta. Top with another slice of bread and butter the top. Repeat to make second sandwich. Carefully place each sandwich in your preheated pan. Place a lid over pan to help the cheese melt. Cook for 2-3 minutes or until the bottom of bread is brown. Carefully flip over and brown other side with lid on pan. Once cheese is melted remove from pan and drizzle top with honey balsamic reduction.

    I love sandwiches like this!! I love that little cheese section by the deli…I could fill my cart right then and there! The balsamic reduction makes this perfect!
