This Caramel Apple Fruit Pizza starts with a brown sugar cookie crust. A cream cheese frosting filled with toffee bits is spread on top and then layers of tart green apple are added. Caramel is drizzled on top to finish it off and make this Fruit Pizza completely irresistible!
This past weekend brought the first blockbuster snow storm to the Eastern Seaboard. Fortunately we escaped the brunt of it here in the Northeast.
After being buried in feet of the white stuff week after week last year, I’m perfectly fine with being left out this year.
We did get a manageable 6 inches of snow and it was just the right amount to throw Mom and I into a cooking frenzy!
Mom has been homebound in a wheelchair with the use of only one hand for a little over a month now. I was absolutely amazed at what she was able to turn out of her kitchen in one day this past weekend!
She made a gigantic pot of minestrone soup, Four Seasons Crab Cakes, Swedish Meatballs, Clam Chowder, brownies and chocolate chip cookies! With one hand!! In a wheelchair!!
I’m a little embarrassed to say she definitely out cooked me and I don’t have any broken bones!
I did make some delicious recipes though, like this Caramel Apple Fruit Pizza. It was a big hit at the AFC Championship party that some friends had on Sunday.
Thankfully we had some amazing food to eat to make up for the Patriots’ loss. 🙁 Better luck next year guys.

Caramel Apple Fruit Pizza
Ingredients
For the cookie
- 1/2 Cup Powdered sugar
- 1/2 Cup Light brown sugar
- 1/2 Cup Coconut oil ,melted
- 1/2 Cup Unsalted butter ,softened
- 1 Large Egg
- 1 teaspoon Vanilla
- 2 1/2 Cup flour
- 1/2 teaspoon Cream of tartar
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking soda
For the cream cheese topping
- 1 Stick Unsalted butter ,softened
- 1 ,8 ounce package Cream cheese , softened
- 2 Cups Confectioner sugar
- 3/4 Cup Light brown sugar
- 1 Tablespoon Milk
- 1 teaspoon Vanilla
- 1 Cup Heath Bar Toffee Bits
Fruit Topping
- 3 Large Granny smith apples
- Juice from half of a lemon
Topping
- Homemade Salted Caramel or store bought
- Heath bar bits
Instructions
- Preheat oven to 375 Degrees F. Lightly spray Large round pizza stone or pan with oil. Set aside.
- In a large mixing bowl cream together both sugars, coconut oil, butter, egg, and vanilla. In a separate bowl mix together flour, cream of tartar, salt, and baking soda. Add dry ingredients to wet ingredients; mix well.
- Place the dough in the center of your pizza stone and press down with your hands to evenly spread dough on to the pan. **Make sure you leave about 1/4 to 1/2 inch of space from the edge of the pan to allow for expansion as your cookie bakes.
- Sprinkle the top of cookie with about 1-2 Tablespoons of granulated sugar and place in oven. Bake for 15-18 minutes on center rack. Bake until cookie becomes slightly golden.
- Remove and cool.
- Once cooled carefully loosen from pan with a spatula and slide onto your serving dish.
- **You want to make sure not to under bake or it will be difficult to move your cookie to a serving dish and it will be difficult to eat with your hands.
- If making homemade caramel make it now while the cookie is baking so it has time to cool
For the cream cheese topping
- In a large mixing bowl cream together butter and cream cheese for 3 minutes until light and fluffy.
- Gradually add both sugars and mix on low to incorporate. Add milk and vanilla and cream for 3- 5 minutes until light and fluffy. Fold in the toffee bits.
Put your pizza together
- Spread cream cheese topping evenly to edge of cooled cookie.
- Chop and slice apples and place in a bowl of cool water with the juice from half of a lemon. **This will prevent apple from browning
- Place apples in design of your choice on top of cream cheese frosting
- Drizzle with caramel and sprinkle with toffee bits
- Store in fridge until ready to serve.
