My mom started making this chicken salad recipe a few years ago and it has become one of our family favorites. I love having a container of this in the fridge to grab a quick sandwich or wrap for lunch. She came up with this cute way of serving her chicken salad when she needed a quick appetizer in a pinch. Chicken Salad {Cucumber Bites}!
My mom discovered that she was gluten intolerant a few years ago but it’s always a struggle for her to eat a gluten free diet. These delectable little bites make it a little easier. The chicken salad recipe is full of flavor and is created to be more of a chicken salad spread. She came up with a few creative ways to display her appetizers as you can see in the different pictures I included. The flowers you see are violas (johnny jump ups). They are a great edible flower to decorate your food with to make it appealing to the eye. They say we eat with our eyes first and I completely agree. A few weeks ago I made my Grilled {Shrimp Scampi} recipe for the blog. I brought my beautifully displayed plate of shrimp and rice to my son. My daughter (who does not eat shrimp) asked where her’s was? I replied, “But you don’t like shrimp.” She responded, ” But it looks so pretty and delicious.” My son shared it with her and she gobbled it up! So I guess if you have a picky eater in your house…try making your food pretty, they may just surprise you.
Chicken Salad {Cucumber Bites}
Ingredients
- 2 Cup Shredded chicken we poached ours but you can use leftover or rotisserie if you like
- 1/2 Medium carrot grated
- 1/4 Cup Red onion finely grated
- 1/4 Cup Celery finely chopped
- 1 Tablespoon Fresh flat leaf parsley Chopped
- 1/4 Cup + 1 Tablespoon Mayonnaise
- Salt and Pepper to taste
- 2 English cucumbers peeled and sliced
Garnish option ingredients:
- Violas small pansies work as well
- Black olives sliced
- Carrots julienned
- Chives cut into 1-2 inch length
- Paprika
- Yellow cherry tomatoes
- Pea shoots
Instructions
For the chicken salad:
- In a medium bowl mix all of the ingredients except for cucumbers.
Prepare the cucumbers:
- Using a potato peeler shave off strips of the cucumber skin or run a fork down sides of cucumber to create streaks on the skin.
- Slice cucumber into 1/4 inch thick slices.
- Top with 1-2 Tablespoons of chicken salad.
- Use your imagination for the garnish.
