Chunks of tender poached chicken breast tossed with pistachios, grapes and white wine give this Chicken Salad {Veronique} an extra special twist. This is not your traditional chicken salad!
Over the years my Mom has hosted many parties and showers and whenever she needed to feed a large crowd this was one of her favorite dishes to serve. I think there were many reasons why she liked it so much. It was great for serving large crowds, she could easily prepare it ahead of time, it didn’t break the bank, it was a bit more special than your traditional chicken salad and above all…It’s delicious! This dish is very versatile as well. It’s great served as a boxed lunch or you can also serve it on your favorite bread or roll.
Chicken Salad {Veronique}
Ingredients
- 3 Cups Cubed poached chicken we poached in chicken broth for added flavor
- 1 Cup Seedless green grapes cut in half
- 1/2 Cup Roasted unsalted pistachios
- 1/2 Cup Finely chopped celery
- 1/2 Cup Finely chopped onion
- 1/2 Cup Mayonnaise
- 1/3 Cup Lemon yogurt
- 1 Tablespoon Dry white wine
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl mix the chicken, grapes, pistachios, celery and onion.
- In a separate bowl mix the mayonnaise, yogurt, wine and mustard.
- Fold the mayonnaise mixture into the chicken mixture.
- Refrigerate. (Best made ahead so flavors meld together but you can also serve right away.)
- We served it on a bed of boston lettuce with fruit as a garnish such as grapes, strawberries or cantaloupe.

Yes, this recipe was and is always a big hit. Easy to put together and able to prepare ahead of time if needed at a larger gathering. Delicious. First time I had something similar was with a slice of cantaloupe and strawberries .at a shower. So many ways to get creative in serving it once you have it made.
