Today we decided to add a bit of a twist to that recipe. Don’t worry this recipe is still super easy and super delicious!
What makes this Cinnamon Swirl Banana Bread so good?
In my opinion there are a couple of things that put this Cinnamon Swirl Banana Bread recipe over the top.
- First of all it doesn’t just have one skimpy little swirl of cinnamon sugar. The cinnamon swirl in this banana bread is added in layers for maximum cinnamon swirl deliciousness.
- The bananas are soaked in strong coffee which gives it a great boost of flavor and adds to the breads moistness.
Why should you use overripe bananas in your Banana Bread?
Overripe bananas are much easier to mash up and they mix into your batter more uniformly. Also, overripe bananas are more aromatic and have a sweeter flavor. As a banana ripens more of the starch is converted into sugar. This gives your Banana Bread some great natural sweetness.

Peel your overripe bananas, place them in a zip lock baggie and freeze them. Once you are ready to use them thaw them completely and add them to your batter. They will be very soupy and may not look very a…ppeal…ing to eat, however that stuff is liquid gold in your Banana Bread!
How to store Banana Bread
Banana Bread can be stored at room temperature for 2-3 days. Just wrap it in plastic wrap or store it in an air tight container. You can also store it in the fridge for up to 1 week. To freeze your banana bread, wrap it in plastic wrap and then place in a zip lock baggie. It can be stored in the freezer for up to 3 months.
Cinnamon Swirl Banana Bread
Ingredients
For the Cinnamon Swirl
- 2 Tablespoons Unsalted Butter ,melted
- 3 Tablespoons Granulated Sugar
- 3 Tablespoons Brown Sugar
- 2 Tablespoons Cinnamon
For the Banana Bread
- 2 Sticks Unsalted Butter ,melted
- 3/4 Cup Brown Sugar ,packed
- 1 teaspoon Vanilla Extract
- 2 Large Eggs
- 2 Cups All-purpose Flour
- 1/2 teaspoon Salt
- 1/4 teaspoon Baking Soda
- 1 1/2 teaspoons Baking Powder
- 1 Cup Mashed overripe bananas
- 1/2 Cup Strong brewed coffee
Instructions
For the Cinnamon Swirl
- Mix all ingredients together in a small bowl and set aside.
For the Banana Bread
- Preheat oven to 350 Degrees F. Grease 1 loaf pan and set aside.
- In a medium bowl mash bananas. Stir in the strong brewed coffee and set aside to soak.
- In another medium mixing bowl whisk together flour, salt, baking soda, and baking powder. Set aside.
- In a large mixing bowl beat together melted butter and sugar until smooth.
- Add eggs one at a time mixing well between each addition.
- Mix in vanilla.
- Add coffee soaked bananas and mix well.
- Gradually add dry ingredients, mixing and scraping the sides of your bowl between each addition.
- Pour 1/3 of your batter into your prepared loaf pan. Spread to cover the bottom of the pan. Sprinkle with 1/3 of your butter cinnamon sugar mixture and cut through with a butter knife to created a swirl.
- Add another third of the batter into your pan and spread to cover first addition. Add another third of your butter cinnamon sugar and swirl with a butter knife.
- Repeat with remaining batter and butter cinnamon sugar mixture.
- Add a line of thinly sliced bananas to the top of your bread if desired.
- Place on the center rack of your pre heated oven and bake for 50-65 minutes or until a toothpick inserted comes out clean.
