Crepes are basically a super thin pancake. This basic {Dairy-Free} Crepes recipe is a perfect start for you to make some pretty tasty dishes. From sweet dessert crepes to savory crepes that would make a great meal or appetizer.
When I was a little girl I always looked forward to sleepovers at Grammie and Grampa’s house. We usually watched Donny and Marie, Bobby Vinton, or The Lawrence Welk Show. Then we’d play “Karasinka”. (I’m quite sure how it’s spelled but I have no clue what the correct spelling would be so that’s what I’m going with!) “Karasinka” is a Russian card game that Grampa learned to play back in Lithuania when he was a little boy. Once he taught me how to play I made him and Grammie play all the time!
When it was time for bed I slept with Grammie in her bed. We would draw letters on each other’s back and we’d have to try to guess what letter was being drawn. We did this until we both fell asleep. Once the light of morning woke us in the morning she would ask me a question she already knew the answer to. “What do you want for breakfast?”
Grammie made the best Crepes and that’s what I always looked forward to. The two of us could wipe out an entire batch by ourselves. We really never did anything too fancy with them. I usually just ate them with real maple syrup drizzled on top or I would spread some strawberry jam on one and then roll it up.
Once my children came along she continued the tradition and Crepes became their favorite morning treat too. It continues to be the most requested breakfast in our home and that’s just fine with me because not only are they delicious, they couldn’t be easier to make. Everything gets whipped up right in the blender!
I have slightly altered Grammie’s recipe to accomodate my daughter’s lactose intolerance with these {Dairy-Free} Crepes but you can certainly substitute the coconut milk with cow’s milk if you prefer. They taste just as delicious either way.
{Dairy-Free} Crepes
Ingredients
- 1 3/4 Cups All purpose flour
- 2 Cups Coconut milk or (cow's milk if not dairy free)
- 3 Large Eggs
- 1 teaspoon Sugar
- 1 Tablespoon Melted coconut oil or (butter if not dairy free)
Instructions
- Pour milk and eggs into your blender and blend on high for 2 minutes. Add flour and sugar and blend on high for 2-3 minutes. Scrape sides of blender with a spatula and add melted coconut oil or butter if using. Blend for another 2 minutes.
- Heat a non-stick coated skillet on medium high heat for 2-3 minutes. You want to make sure your pan gets nice and hot before pouring batter into the pan. Place a small amount of coconut oil in your pan and swirl it around to coat the pan. Pour about a 1/4 cup of batter into the center of the pan and then lift the pan off of the burner and tip the pan to swirl the batter out to the edges to form a thin circular shape. Return pan to the burner and after about 15-20 seconds carefully work a spatula underneath your crepe and flip it over to the cook the other side. Cook for 15-20 seconds and remove to a warming dish. Continue adding coconut oil before each crepe is made. Continue until all the batter is used.
- You can keep already made crepes warm in the oven set at 200-225 degrees F.

These look awesome. My 14-year-old daughter loves crepes and it’s always the breakfast of choice when she picks. We usually put cream cheese inside, and chocolate chips.

Hi, I was searching the web for the rules of that card game. That’s all I can recall too. I used to play with my grandmother who was Lithuanian (1st generation American). That’s what I recall and how I spelled it so the web search led me to your site!

Hi John, Yes I do remember the rules. At least the ones I was taught. I have tried to search the game on the internet as well but I really have no clue how to spell it so maybe that’s one reason I couldn’t find anything either. If you’d like I could try to write out the rules for you and post them.
