Sweet crisp Dairy Free Sugar Cookies topped with creamy Coconut Oil Frosting are the perfect sweet treat for your Valentine!
Just because something is Dairy Free or Gluten Free doesn’t mean it has to be Flavor Free. These Dairy Free Sugar Cookies are a perfect example of that!
My daughter was home from college for the weekend and I decided to send her back with a little sweet treat that she could enjoy.
She suffers from a lactose intolerance and can’t enjoy too many sweet treats without popping a few Lactaid pills.
These cookies were so delicious I had to quickly package them up so my son wouldn’t eat them all on her.
He doesn’t have the same lactose issues as her but he said he liked the Coconut Oil Frosting better than regular Buttercream!
Easy piping tip for frosting your Dairy Free Sugar Cookies
I filled a piping bag with the frosting to squeeze a dollop of frosting on each cookie after they cooled but you could just as easily fill a zip lock baggy and cut a small hold in one of the corners or just spread it on with a butter knife.
I added a fresh raspberry for some color which added a nice fresh tart flavor but some colorful sprinkles would be pretty too.
The Coconut Oil Frosting was easy to make but I’m not sure how well it would fair on a hot day. Coconut Oil can be temperature sensitive.
You’ll definitely want to have the air conditioning on if your making this in the warmer months.
Dairy Free Sugar Cookies {with Coconut Oil Frosting}
Ingredients
For the cookie
- 1/2 Cup Powdered sugar
- 1/2 Cup Sugar ,plus extra for sugar topping
- 1 Cup Good quality coconut oil ,I used better body organic coconut oil, naturally refined
- 1 Large Egg
- 1 teaspoon Vanilla
- 2 1/2 Cup Flour
- 1/2 teaspoon Cream of tartar
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking soda
For the frosting
- 1/2 Cup Coconut oil ,in its solid state
- 2-3 Cup Confectioner sugar
- 2-3 Tablespoons Almond milk for thinning
- 1 teaspoon Vanilla extract
- 1 ,6 ounce package Fresh raspberries for topping ,optional
Instructions
For the cookie
- Preheat oven to 375 Degrees F.
- In a large mixing bowl cream together both sugars, coconut oil, egg, and vanilla. In a separate bowl mix together flour, cream of tartar, salt, and baking soda. Add dry ingredients to wet ingredients; mix well.
- Roll dough into 1 inch balls and place about 1 inch apart on a cookie sheet.
- In a small dish filled with extra sugar, dip the bottom of a flat bottomed glass in the sugar and then press down on each dough ball to flatten. Dip glass bottom back into the sugar before you flatten each dough ball.
- Bake for 8-10 minutes.
- Remove from oven and let cookies cool on a cooling rack to room temperature.
For the frosting
- Cream coconut oil and add 1 cup of confectioner sugar at a time alternately with almond milk.
- Add vanilla extract and mix well.
- Place frosting in a pastry bag or zip lock baggy for piping or spread onto cooled cookies.
