This luscious {Fluffy} Strawberry Cheesecake is a bit different from traditional cheesecake. It has a light and fluffy texture. Whipped egg whites are folded in to create a mousse like consistency. Even those with an aversion to the decadent dessert (like my daughter) will be having second thoughts.
My mom loves to collect things. Ribbon, bolts of fabric, scrapbooking paper, books…. She even has a binder that she stores recipe finds in. Thats where this delicious recipe for {Fluffy} Strawberry Cheesecake was found.
The claim to fame of this Strawberry Cheesecake Recipe!
I’m not sure where she found it but apparently it’s Sally Fields (the actress) mother’s recipe. I have a few yummy cheesecake recipes that I will be sharing but I love the light and fluffy texture of this one.
My daughter even polished off an entire piece and was ready to go in for seconds and she doesn’t like cheesecake. The rest of us cheesecake fans were equally as pleased and there were quickly only a few bits of graham cracker crumbs left where the cheesecake once sat. It will definitely be added to our treasured family recipe list!
{Fluffy} Strawberry Cheesecake
Ingredients
Crust:
- 1 1/2 Cups Graham cracker crumbs
- 1/4 Cup Confectioner's sugar sifted
- 6 Tablespoons .Unsalted butter melted
Filling:
- 1 Cup Sugar
- 1/3 Cup Whipping cream
- 4 8 ounce packages Cream cheese softened
- 4 Egg yolks beaten
- 3 Tablespoons Flour
- 1 teaspoon .Vanilla extract
- 1 teaspoon . grated lemon rind
- 4 Egg whites
Instructions
- Preheat oven to 350 degrees F.
For crust:
- Mix graham cracker crumbs, confectioner's sugar and melted butter together. Press into the bottom of a 9 inch springform pan. Set aside.
For the filling:
- In a small bowl dissolve sugar in the whipping cream and set aside.
- In a large mixing bowl beat softened cream cheese until smooth. Add egg yolks, flour, vanilla and lemon rind and mix well.
- Mix in the whipping cream/sugar mixture.
- In a separate bowl, whip the egg whites until they are stiff but not dry.
- Fold egg whites into the cheese mixture.
- Pour into springform pan and bake on middle rack for about 1 hour.
- Remove from oven and cool. Once cool place in refrigerator to chill.
- Top with fresh strawberries and strawberry sauce.

Tips for making this Strawberry Cheesecake
This Cheesecake recipe was slightly modified from its original version.
Sally says she likes to bake it in a pie plate which is also a nice idea. I would think that it would need to be a pretty large pie plate though.
I try to make the cheesecake a day ahead so it has plenty of time to chill but an hour or two will work.
You can certainly eat it at room temperature as well if you can’t wait. My nephew nabbed his piece as soon as I was finished photographing it and he didn’t seem to have a problem with the temperature.
Pie plate or springform pan, chilled or room temperature…it’s just plain delicious!
