I haven’t always been a fan of Guacamole but when my son started making Homemade Guacamole I was sold.
Now it’s a necessary topping whenever we are cooking Mexican dishes. Our Chicken Quesadillas just taste so much better with a little Guacamole on the side.
The other added bonus to my new found love of Guacamole is the fact that it’s good for me!
This is the time of year when I know it’s time to get my act together. Spring is right around the corner so it’s time to start eating healthy. Once those warm Spring temperatures hit I won’t have layers of clothing to hide under so it’s definitely time to start shedding the pounds!
There are many different ways to make Guacamole but this recipe is my favorite. Not too smooth, not too chunky and just the right amount of spices.

Homemade Guacamole
Ingredients
- 3 Ripe avocados
- Juice from 1 lime
- 2 Tablespoons Fresh chopped cilantro
- 1 Roma tomato ,seeded and pulp removed, diced
- 1 teaspoon Cumin
- 1/2 Cup Minced red onion
- 1 Clove Garlic ,minced or put through a garlic press
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Slice avocados in half and remove pit. Scoop out inside of avocado with a spoon and place in a medium bowl. Mash with a fork until consistency is creamy with some small chunks . Place remaining ingredients in the bowl with the avocado and mix well.
- Serve with corn chips and veggies as a dip or as a side with your favorite Mexican dishes.
- ** You will want to make the same day it will be served as it may begin to turn brown by the next day. Store covered in the fridge until ready to serve.
Nutrition
Homemade Guacamole is always a big hit at parties. I like to serve it with blue corn chips, and red colored veggies for an eye catching appetizer.
