What’s a Lemon Blueberry Bliss Bars? A chewy Lemon Blondie that’s loaded with white chocolate chips and dried blueberries. Then it’s topped with a Lemon Cream Cheese Icing and sprinkled with more dried blueberries. One bite and you will be in total Lemon Blueberry Bliss!
I haven’t been able to get those {Better than Starbucks} Cranberry Bliss Bars that I made last Fall off my mind. So I thought I would make a Spring version of the recipe. Now there’s only one problem. I’m not sure which one I’m more in love with!
Tips for making the Best Lemon Blueberry Bliss Bars
As easy as this recipe is to make I do have a couple tips for you.
First of all this recipe calls for melted butter. You may be tempted to just cream softened butter however, I have found that using melted butter will give your Blondies a better texture. So take the extra few seconds to melt it.
My second tip is to make sure you line your pan with either parchment paper or aluminum foil. Make sure you use enough to overhang the pan so that you have something to hold onto when you remove them from the pan. This will make it much easier to cut your Blueberry Bliss Bars.
Finally, make sure you let your Bliss Bars cool completely before you add the Cream Cheese Icing to them. Other wise you’ll have a runny mess on your hands.
How long will Lemon Blueberry Bliss Bars stay fresh?
Bliss Bars should stay fresh for about 3-5 days. Once you have added the Cream Cheese Icing you will need to keep them refrigerated. However, you can keep the Bars without the icing on your counter. Just keep them covered with plastic wrap or stored in an air tight container.
Can I used fresh blueberries in place of dried blueberries?
I would not recommend using fresh blueberries in this recipe. There is just too much water in them and it would alter the texture and flavor of the recipe.
Lemon Blueberry Bliss Bars
Ingredients
For the Lemon Blueberry Bliss Bars
- 2 Sticks Unsalted butter, melted
- 1 1/2 Cups Brown Sugar ,packed
- 2 Large Eggs
- Juice from half a lemon
- Zest from one lemon
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 2 Cups All purpose flour
- 1 Cup White chocolate chips
- 1 Cup Dried blueberries
For the Lemon Cream Cheese Icing
- 1 ,8 ounce package Cream Cheese ,softened
- 1 1/2 Cups Confectioner Sugar
- Juice from half a lemon
- 1/2 Cup Dried blueberries
- 3 Ounces Melted white chocolate
Instructions
For the Lemon Blueberry Bliss Bars
- Preheat oven to 350 Degrees F. Line a 13x9 pan with parchment paper or aluminum foil . (* Leave enough foil or parchment hanging over edge to help you lift blondies out of the pan once they are cooked.)
- In a medium bowl mix together, flour, baking powder, and salt. Set aside.
- In a large mixing bowl cream melted butter and brown sugar.
- Add eggs one at a time and mix.
- Mix in Lemon juice, vanilla and lemon zest.
- Add dry ingredients in and mix to incorporate.
- Add dried blueberries and white chocolate chips and mix well.
- Spread mixture in your prepared pan evenly.
- Bake in preheated oven for 18-22 minutes. The top of your bars should be lightly browned.
- Remove from oven and let cool completely before adding cream cheese icing.
For the Lemon Cream Cheese Icing
- In a large bowl mix softened cream cheese with a hand mixer on high speed until creamed. Add confectioner sugar and mix on low speed until incorporated then increase to high speed and mix until smooth.
- Add vanilla and Lemon juice and blend well.
- Lift your cooled blondies out of the pan and place on a large cutting board. Spread icing over top of blondies then cut into triangles.
- Sprinkle dried blueberries over bars and then drizzle with melted white chocolate.
- **To melt chocolate place white chocolate chips in a microwave safe bowl and heat on high in 10 second increments stirring between each. Will probably be ready after about 3 times in the microwave. Once they begin to melt they should get smooth as you stir them. Careful not to over heat them or they will seize up.
- ** I like to place melted chocolate in a small zip lock baggie. Cut a very small part of the corner of the baggie off to make a small hole to squeeze melted chocolate out of.
- Bars should be stored in the fridge until ready to serve because of the cream cheese icing.
