Mango Salsa is the perfect topping to brighten a boring chicken or fish dinner! The Mangos at my local Market have been ripe for the picking the past couple of weeks so I’ve been stocking up. The last two were begging to be made into this amazing salsa.
I love making Mango Salsa as a topping to spruce up my chicken and fish dishes this time of year. It can totally brighten up a boring dish and breathe new life into it. This salsa made it’s way into our Naked Chicken Burritos the other night along with the Homemade Guacamole that I shared yesterday. I made a Homemade Taco Seasoning for the chicken that had a little kick to it. The sweet and tart flavors of the salsa was the perfect topping to cut the spiciness of the chicken.
It also makes great healthy snack served with tortilla chips. When I have this pre made in the fridge it really helps deter me from grabbing junk food. Since it only has a few simple ingredients I can whip up a batch in just a few minutes.
