Need a little boost?  These little Quinoa Apricot Protein Bites are the perfect nutritious pick me up to satisfy you when those hunger pains hit!Quinoa Apricot Protein BitesWhen I’m trying to eat healthy it’s important that I keep nutritious treats like this around.  When those hunger pains hit I’ve been know to grab junk for a quick fix if there’s nothing healthy readily available. They only took a about 15 minutes to make and they are totally satisfying and filling!

These protein bites are super easy to make. Just place a few ingredients in your blender and mix it up.  Then kneed in your Quinoa and dried fruit by hand.   You can even substitute your favorite nuts and dried fruits too.  Just use this recipe as a guide.

 

Quinoa Apricot Protein Bites

One of my favorite parts about this recipe is the added Quinoa. Even though Quinoa is a grain it is also high in protein.   I love using it in its raw form in treats like this.  It gives it a nice crunchy texture. It’s a great way to add a little extra protein to your diet.

Ingredients

  • 1 Cup Roasted unsalted almonds or raw almonds
  • 7-8 Dates pitted
  • 1/4 Cup Quinoa
  • 6 Dried apricots chopped
  • 2 Tablespoons Water
  • Fine natural coconut ,unsweetened (if you can't find the finely grated coconut just process your own by placing in food processor or blender)

Instructions

  • Place almonds in the small serving attachment of your blender or a small food processor. Process until finely grated but before it turns to butter. Add the dates and water and process to mix. Remove to a mixing bowl and mix in the quinoa and apricots by hand. Form into 1 inch balls and roll in the coconut. Store in an airtight container in the fridge.

      Hi Sarah, No. I used uncooked quinoa. It gives it a nice crunchy texture.
