Do you ever get stuck in a supper rut? Spinning out the same meals week after week. Don’t worry it happens to the best of us. I mean we have our favorite dishes right? But after a while even the most delicious dishes can get a little tired. Sometimes all you need is a killer sauce to breath new life into your supper!
The Coconut Crusted Chicken Tenders that I made for dinner tonight had a little tropical flare and needed the proper dipping sauce to accompany them. This Spicy Mango Dipping Sauce was the perfect marriage!
Mangos are ripe for the picking and I never want to miss out on enjoying one of my favorite Summer fruits. So this Spicy Mango Dipping Sauce was the perfect way for me to get my mango fix. The addition of Sriracha gave it just the right amount of kick and the coconut milk gave it a beautiful creamy consistency.
This is definitely one of those meals that just screams Summer. Today we finally reached some warmer more seasonable temperatures here in Massachusetts. It pretty much rained non stop all last week. We finally got a glimpse of the sun on Mother’s Day. May has felt a bit more like April. Today was much warmer and after all that rain last week the warmth kicked things into high gear. All the flowers and leaves are finally bursting open.
All that warm sunshine put me in the mood for something a little tropical. It doesn’t get any more tropical than coconut and mangos. It was a nice little change to our weekly meal plan.
Spicy Mango Dipping Sauce
Ingredients
- 1 Small Mango ,peeled and diced, about 3/4 C
- 1/2 Tablespoon Sriracha
- 1/2 Tablespoon Honey
- 1 Tablespoon Lime juice
- 1 Tablespoon Fresh cilantro ,chopped
- 1/4 teaspoon Salt
- 1/2 Cup Canned coconut milk ,not the kind in the dairy section
Instructions
- Place all ingredients in your blender or food processor and blend for about 2 minutes until smooth.
- Place in a covered container and chill for about 1 hour. Serve with chicken fingers for dipping.

This looks really interesting! I was surprised that the coconut was sweetened. Since we go low carb most of the time, all the coconut in recipes is unsweetened, but I’ll bet it is delicious!
