Sweet Potato Shepherd's Pie

This Sweet Potato Shepherd’s Pie is my new favorite dinner for so many reasons.  For one it’s so unbelievably delicious you’re gonna find yourself going in for second’s and thirds. I really had to hold myself back from going in for fourths. It’s seriously that good!

I’ve made it twice in the past month.  The first time I was testing it out as a new recipe to try.  My son saw that I was making it and totally turned his nose up to it.  He’s not a huge fan of traditional Shepherd’s Pie and when he heard that I was using Sweet Potatoes and ground turkey he just thought I was going to make it worse!  I kept telling him he was wrong but it just did not sound appealing to him.

Boy did he eat his words….and several helpings of Sweet Potato Shepherd’s Pie! He admitted that he was took quick to judge and that it was pretty amazing.

I made it for the second time last week only I doubled the recipe to feed more people.  Paul’s mom was up visiting and I had it waiting for them after he picked her up from the airport.  I know after a day of traveling I’m ready to sit back relax and fill my belly so I thought it would be a nice treat.

It was a good thing that I doubled the recipe! We all went in for seconds.  Like I said before…it’s really that good!

The other great thing about this recipe is it’s the perfect make ahead meal.  I made it over the weekend and stored it in the fridge.  On Monday I popped it in the oven after work and had it ready to eat in less than an hour.  So it’s perfect to make ahead for those busy weeknights when you don’t have time to make dinner.

I don’t know about your family but I have to say one problem I have with mine is they are not big fans of left overs.  This recipe was a different story though.  It actually taste just as good reheated the next day, so go ahead and make extra.  They’ll love having it again and again.

Sweet Potato Shepherd’s Pie

Ingredients

  • 2 Pounds Ground turkey ,I like to use 85% lean so it's not too dry
  • 2 Tablespoons Worcestershire sauce
  • 2 teaspoons Ground sage
  • 2 teaspoons Dried thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Cayenne
  • 4 Carrots ,diced
  • 2 Medium Onions ,diced
  • 5 Cloves Garlic ,crushed
  • 5 Tablespoons All purpose flour
  • 4 Cups Chicken broth
  • 1 ,14 ounce package Frozen corn

For the Maple whipped Sweet Potatoes

  • 5-6 Large Sweet potatoes ,peeled and cut into cubes
  • 2 Tablespoons Unsalted butter
  • 1/4 Cup Full fat plain yogurt
  • 1 teaspoon Salt
  • 5-6 Tablespoons Real maple syrup

Instructions

  • Pre-heat oven to 350 degrees.
  • Heat a large, deep sauté pan over medium-high heat and spray with cooking spray.
  • Add ground turkey to the hot pan and cook 7-10 minutes until browned, breaking turkey up with a wooden spoon. Add Worcester sauce, sage, thyme, salt and cayenne. Cook for another minute. . Remove cooked turkey from pan and set aside.
  • In the same pan, sauté carrots, onions and crushed garlic over medium heat until tender, about 6-7 minutes, stirring frequently.
  • Add reserved turkey back to the pan and sprinkle entire mixture with flour. Cook for 1 minute then pour in chicken broth. Bring back to a boil then reduce heat to low. Simmer until gravy starts to form.
  • About 7-10 minutes. Remove from heat and add frozen corn. Pour into a 13x11 deep baking dish and set aside.

For the Maple Whipped Sweet Potatoes

  • Fill a large pot with water and add cubed sweet potatoes. Bring to a boil and cook until sweet potatoes are tender and cooked through. About 15 minutes depending on the size you cut your sweet potatoes.
  • Drain water and add butter to sweet potatoes. Let sit for a few minutes to cool.
  • Put sweet potatoes in a blender or food processor along with yogurt, salt and maple syrup and blend until smooth. about 1-2 minutes. (You can also mash or use a mixer if you don't have a blender or food processor)
  • Place dollops of whipped sweet potatoes over turkey mixture and then spread with a spoon.
  • At this point you can cover and store in the fridge. (Once it is cooled) or place it in your pre heated oven and bake for 45-60 minutes. Garnish with fresh thyme if desired and serve.

Serve this Sweet Potato Shepherd’s Pie for a casual Thanksgiving Dinner!

If you’re looking for a more casual Thanksgiving meal this is it!  All the delicious flavors of a big Thanksgiving spread wrapped up in one easy to make meal!  Just serve it with a little cranberry sauce or Raw Cranberry Relish and you’ll be golden!
