Nothing says Autumn more than Apple Cider and Caramel Apples.  Mix them together and you have one special treat to enjoy. Apple Cider Caramel Apples!

Apple Cider Caramel Apples

One of my favorite Fall treats are Caramel Apples. Whenever I’m at a Fall festival or fair and I see this sugary confection I’m all over it!

Sure Apple Crisp with a big scoop of vanilla ice cream is tempting and who doesn’t love cotton candy or a big bag of Kettle Corn but once I spot an ooey gooey Caramel Apple my only decision is what type of topping I want my Caramel Apple coated with!

Apple Cider Caramel Apples

I decided to make my Caramel Apples with a little twist.  Last Fall I shared a recipe for Apple Cake {with Apple Cider Caramel} and I remembered how delicious that caramel was.  I knew that Apple Cider Caramel would be an amazing topping for my sweet juicy apples.

It was ooey gooey Apple Cider Caramel Apple perfection!

Apple Cider Caramel Apples

Ingredients

  • 2 Cups Sugar
  • 1/4 Cup Light corn syrup
  • 1/2 Cup Apple cider
  • 1/2 Cup Heavy cream
  • 2 Tablespoons Unsalted butter
  • 1 teaspoon Vanilla
  • Pinch of salt
  • toppings of your choice I used cinnamon chips, chopped pecans and melted white chocolate
  • 6 Macintosh Apples

Instructions

  • Line a cookie tray with parchment paper and lighly spray with cooking oil. Set aside.
  • In a medium saucepan combine sugar, corn syrup and apple cider. Whisk until just combined. Bring to a boil over medium high heat and cook without stirring for 8-10 minutes or until liquid turns a deep amber color and registers 320 Degrees F on a candy thermometer.
  • Remove from heat and slowly whisk in cream. ( A little at a time or it will boil over) Then add the butter, vanilla and a pinch of salt. Return to heat and stir until smooth. Remove from heat and let cool until it's thick enough to coat the surface of a spoon.
  • While you're waiting for caramel to cool wash about 8 apples and remove stems. Insert a popsicle stick or lollipop stick in the side where the stem was.
  • Dip apple into caramel and twirl to coat apple. Lift the apple out and let the excess caramel drip off. Then roll in topping.
  • Place on parchment lined cookie tray.

The cinnamon chips that I used for topping my Apple Cider Caramel Apples where amazing but if you can’t find any you can use just about anything you like.  I made an assortment of toppings so we could choose our favorite.  What will your favorite be?
