Cookout season has arrived! So you’re probably going to be needing some great salad recipes. This Broccoli Apple Salad has a sweet creamy honey and apple cider vinegar dressing added that will have you digging in for seconds!
They say that to retain the vitamins and nutrients in broccoli the best way to eat it is raw. Once you cook it a lot of the nutrients are depleted.
I’ve never been a fan of raw broccoli but I could eat this salad for breakfast, lunch and dinner!
Crunchy broccoli, red pepper, apple, red onion, pecans and shaved carrots are chopped up into bite sized pieces and mixed with a creamy raw honey and apple cider vinegar dressing.
The perfect side for those up coming cookouts this Memorial Day weekend!
Broccoli Apple Salad
Ingredients
- 4-5 Cups Broccoli ,chopped
- 1 Large Red pepper ,chopped
- 1/4 Cup Chopped red onion
- 1 Large Apple ,chopped, I used a macintosh
- 1/2 Cup Chopped pecans
- 2 Carrots ,shredded
For the dressing
- 3/4 Cup Mayonnaise
- 3 Tablespoons Raw honey
- 2 Tablespoons Raw apple cider vinegar
- 2 Tablespoons Chia seeds
Instructions
For the salad
- Toss vegetables together in a large bowl.
For the dressing
- In a small bowl whisk together the mayonnaise, honey, vinegar and chia seeds
- Pour over vegetables and toss to coat with the dressing.
