Caprese Quinoa Salad is the perfect healthy side dish for you to serve at your next cookout. All the wonderful flavors of Caprese Salad with the addition of quinoa for a little extra protein boost.
I’ve kind of been on a Caprese kick lately since I shared the Caprese Tartlets a few weeks ago. We’ve been so hooked on those delicious flavors that I’ve made several different dishes. I made a meal out them with the Caprese Chicken that I shared last week, a Caprese Dip that I hope to be sharing soon and now this tasty Caprese Quinoa Salad!
We’ve been trying to eat a bit healthier now that the warmer weather is here. I’m still trying to shed my winter coat that inevitably appears at the end of every winter.
My son and I like quinoa but only if it has some good flavor added. One trick I have for doing this is to add a little chicken broth when I’m cooking it or cook it in chicken broth instead of water. It definitely gives the quinoa a good flavor boost.
My daughter’s favorite way to eat quinoa is as a salad like this recipe. One thing I like best about making a salad with it is that if I have left overs, it’s perfect to grab for a healthy lunch the following day.
Caprese Quinoa Salad
Ingredients
- 1 Cup Uncooked,quinoa ,prepared according to package directions
- 8 Ounces Fresh mozzarella ,diced
- 1 Cup Cherry tomatoes ,halved
- 1/2 Cup Fresh basil leaves ,chiffonade
- 1/4 Cup Balsamic vinegar
- 2 Tablespoons Olive oil
- Salt and pepper ,to taste
Instructions
- Cook quinoa according package directions in either two cups of water or chicken broth.
- Let quinoa cool to room temperature and then chill in the fridge.
- In a large bowl toss quinoa with remaining ingredients and then chill in the fridge until ready to serve.

I have a feeling that after this long winter here in Massachusetts everyone is going to be having a lot of cookouts. This Caprese Quinoa Salad will definitely be the perfect side dish to share!
