Sweet Summer Cherries are ripe for the picking! These Cherry Muffins {with Crumb Topping} are the perfect goodie to go with your morning coffee. Filled with fresh juicy cherries and crushed pineapple for a moist and delicious sweet treat!
I look forward to all the delicious fruit that comes into season this time of year. Especially Cherries! I could eat them by the bushel!
Luckily I was able to save enough to put into these tasty muffins. I love making Blueberry Muffins and Banana Bread but I wanted to switch it up bit. These Cherry Muffins were a big hit and I’ll definitely be making them again soon.
The crushed pineapple gave them a bit of a tropical twist and made them nice and moist. The crumb topping gave them just the right amount of sweetness.
Cherry Muffins {with Crumb Topping}
Ingredients
For the muffins
- 2 Cups Flour
- 3/4 Cup Sugar
- 1/2 teaspoon Baking soda
- 1 1/2 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1 Cup Coconut oil ,melted
- 1 ,8 ounce can Crushed pineapple (drained)
- 1 Large egg
- 1 teaspoon Vanilla extract
- 25-30 Ripe fresh cherries ,pitted and quartered
For the crumb topping
- 1/2 Cup Flour
- 1/2 Cup Oatmeal
- 1/2 Cup Brown sugar
- 6 Tablespoons Unsalted butter
Instructions
- Preheat oven to 375 Degrees F.
For the muffins
- Line 12 standard muffin tins with paper liners. Set aside.
- In a large bowl whisk together all dry ingredients. Add oil, vanilla and egg and mix to incorporate. Fold in pineapple and cherries.
- Evenly fill prepared muffin tins. Set aside.
For the crumb topping
- Place all ingredients in a small bowl and cut together with a fork or pastry cutter until it forms corse crumbs.
- Evenly top each muffin with crumb topping.
- Bake for 20 minutes or until a toothpick comes out clean.
- Let cool and remove to serving dish.

How to pit a cherry easily…
You’re probably thinking how am I going to get all those little pits out of my cherries!?
Here’s a helpful tip to make it easy! Just pull off the stem and then using a straw poke a hole through the cherry center and the pit will come right out!
(Just make sure you use a standard size straw whose hole is about the same size as a cherry pit).
I placed the cherry on a cutting board and pushed the straw down on it. Once it punctured the cherry I picked the cherry up and worked the straw the rest of the way through.

These sound delicious! I used to make muffins all of the time but haven’t in a long time. I’m wanting to get back to it because I’ve been waking up early and getting hungry for lunch way to early, I guess I need to become a breakfast eater ha. Thanks for sharing!
