Brighten your Quinoa up with this Cranberry Quinoa Salad.  Quinoa is tossed together with Dried Cranberries, Mandarin Oranges, Sliced Almonds and chopped Baby Spinach then drizzled with Orange Raspberry Vinaigrette for a fresh and healthy dish.

Cranberry Quinoa Salad

I’ve been totally hooked on that Apple Walnut Quinoa Salad that I shared a couple weeks ago.  I love when healthy foods that are good for you are delicious too!  I didn’t want the Quinoa party to end so I decided to come up with another Quinoa Salad creation.

I love cranberries and oranges combined together so I knew they would be the perfect combo to add to my next Quinoa Salad.  The tart and sweet combination was just what I was aiming for.  I gave it a little iron boost by putting in some baby spinach then finished it off with my Orange Raspberry Vinaigrette to build on that sweet and tart flavor.  Healthy and delicious perfection!

I’ve been known to grab junk to toss in my mouth when I get busy during the week.  Sometimes thats just easier than making something healthy.  I love making a healthy Quinoa Salad over the weekend to keep in my fridge.  Then I have a delicious healthy lunch ready and waiting for me during my busy work week. It’s amazing how much more energy I have when I fill my body with nutritious food!

Cranberry Quinoa Salad {with Mandarin Oranges & Almonds}

Ingredients

  • 1 Cup Quinoa, cooked according package directions
  • 2 Cups Baby spinach ,roughly chopped
  • 1 Cup Craisins
  • 8 Ounce container Mandarin oranges ,juice drained
  • 1 Cup Sliced almonds
  • Orange Raspberry Vinaigrette

Instructions

  • Toss cooked quinoa, spinach,craisins, mandarin oranges and sliced almonds together. Toss with Vinaigrette and chill in the fridge for and hour before serving.

    Does the quinoa measure 1 cup before or after it is cooked?

      Hi Jenn, It’s one cup of uncooked quinoa. Then cook it according to the package directions.
