Who says that to make a delicious meal you need  to spend hours slaving in the kitchen? I’m not a big crockpot cooker but with meals like this Crockpot Chicken Cacciatore {with Red Wine} I may just turn into one. It was so simple to make and I loved coming home from work with dinner ready to be served!

Crockpot Chicken Cacciatore {with Red Wine}

If you ask any Italian what the secret is to make a good sauce (gravy). The answer would most likely be, time. The longer the sauce cooks the tastier it gets.

That being said, I guess one of the reasons this Crockpot Chicken Cacciatore is so tasty is because it sits there all day long bubbling away in its little crockpot. The flavors from all the ingredients begin the meld together and create one incredibly delicious sauce!

This is my third time making this meal and it certainly won’t be the last. It has definitely become one of my family’s favorite meals.

I love that this Crockpot Chicken Cacciatore {with Red Wine} is easy to make and that it’s filled with fresh healthy ingredients!

Crockpot Chicken Cacciatore {with Red Wine}

I love that this Crockpot Chicken Cacciatore {with Red Wine} is easy to make and that it's filled with fresh healthy ingredients!

Ingredients

  • 8-10 Bone-in skinless chicken thighs
  • 2 Red peppers cut into strips
  • 2 teaspoons Dried basil or 2 Tablespoons, freshly chopped
  • 1/2 teaspoon Crushed red pepper optional
  • 2 Cloves Garlic ,Chopped
  • 1 1/2 Cups Red wine
  • 2 ,28 ounce cans Crushed tomatoes
  • 2 Tablespoons Olive oil
  • Salt and pepper to taste

Instructions

  • Heat oil in a large skillet on medium high heat. Season chicken with salt and pepper.
  • Brown chicken thighs on each side. Set aside.
  • Fill crockpot with all of the ingredients. Add chicken pieces, coat with sauce. Cover crockpot and turn on low for 8 hours or high for 4 hours.
  • Serve over pasta or rice.

    Hi Nicole! This sounds like a great dish. I am a fan of crock pot cooking. I always feel like I come home and someone has made dinner for me when I use my crock. Do you serve your chicken on the bone? I bet it is really tender and falls right off the bone. This recipe is a great excuse for me to buy some more wine. Some for the pot and some for me………….

      Hi Christina! I have made this both ways but it’s definitely better with the bone in. You are correct. The meat just falls right off the bone. Sooo yummy! And yes. Make sure you buy extra wine for your glass to go with this delicious meal! 😉

    This looks very tasty and quick to make, a perfect fit to my busy schedule. I don’t do alcohol but I guess I can skip the wine and make a delicious meal for my family in just a blink 🙂

      Hi Petro! Thanks for stopping by. This would be just as delicious without the wine. The alcohol does get cooked out of it though if that helps. If you leave it out you may want to substitute chicken or vegetable broth.
